Siboire Dépôt is the kind of place that makes you wish you lived nearby just so you could drop in all the time. Housed in a beautifully restored old train station, it has an atmosphere that feels both historic & lively. The building itself is worth a visit, with warm lighting, brick walls, & that unmistakable character that only an older structure can offer. It's one of those rare spots where design, history, & good food all come together effortlessly.
The staff were genuinely friendly, attentive, & helpful from the moment we walked in. Service was efficient without ever feeling rushed. I appreciated that the noise level was moderate enough to have an actual conversation, which made it perfect for visiting with friends.
I went with the locals' recommendation & ordered the Fish & Chips, opting for the three-fish sampler. It did not disappoint. The fish was fresh, perfectly cooked, & full of flavor. The batter was crisp & light, & the coleslaw on the side added a fresh, balanced touch. My friend had the venison burger, which looked & tasted fantastic. Everything about the meal felt fresh & made with care.
Siboire's beer selection deserves a special mention. They have an impressive range of house brews, & the hazy IPA I tried was excellent: fruity, aromatic, & balanced. It's clear the brewery takes pride in crafting quality beer that pairs well with their food.
The location could not be more convenient, right in the heart of Sherbrooke & within walking distance from my hotel. Whether you are a visitor or a local, it's an easy place to settle into for a relaxed meal & a great pint.
If I lived in Sherbrooke, this would absolutely be my regular go-to spot for good food, good beer, & good company.

Un espace que les Sherbrookois avons bien adopté. Belle ambience, bonne bière, bien situé! Seul pépin: un peu trop cher si on considère le repas + la boisson.

Les frites allumettes que vous serviez avant étaient meilleures, les frites congelées pas très cuites, c'est moyen.Mais le poisson, excellent & la bière succulente

Belle place! Mon amis a recommender & on est venu lautre soir. La nourriture etais bonne & la biere excellent mait Le service etais un peu slow. L'ambiance etais vraiment 10 sur 10

Une rencontre en pm, on n'a pas mangé, service impeccable. Plaisir de discuter de cinéma en gang en dégustant de bonnes bières. Merci.

Soupe très bonne ,biere très bonne,Poisson excellent, mais quand on fait de la friture de poisson c'est important davoir de la belle huile & de la changer souvent, car autrement ça viens gâcher un peu le goût du ppisson & des frites. Mais même avec ve petit bémol je recommande chaudement car la qualité des 3 poissons (menu dégustation à 28$) est vraiment irréprochable!!! BRAVO! & bonne continuation!!!
