Best meal i ever had in quebec. The flavours & preparations are superb.
The bread is THE ABSOLUTE BEST i have ever had at a restauarant. Plushier & tastier than any milk bread i ever had, but looks like focaccia. Unreal. I will miss it so much.
The chef sends out a snack that is like a small wonton soup. I forgot to take a picture because once I smelled it i had to dig in. I was licking the bowl clean. Definitely a highlight. Such impressive flavour.
The foie gras was amazing, such a treat to see seared foie on a menu. Usually everyone pates it but their preparation properly & excellently highlighted its luxuriousness, for such a rich ingredient, i could've eaten 2 of these.
The soffocato was huuuge & delicious, & i loved the red deer so so much. I order venison almost everytime i see it on a menu & they did delivered excellence!
The Tokyo short is one of the best cocktails i ever had. It is simple, but done to perfection. So refreshing, the alcohol level is perfectly balanced by the freshness & little bit of tang. I will crave it forever.
Expensive splurge worth the service & the food.
I was surprised to see that this restaurant was listed in the Michelin guide (but has no stars... yet). Everyone here is super friendly & attentive. We figured that we had to do the 7-course, & we were warned it would be about three hours. Going into it knowing this was good... I think other reviewers were off-put like the 7-course was being discouraged. The restaurant itself is pretty dimly lit but not too dark, & the noise level is moderate & sometimes you can't hear people at a normal volume, which kind of stinks.
But we're here to figure out how the food is, right? Summarized, $150 CAD is not bad for a filling & adventurous 7-course splurge prepared by a team dedicated to their craft. Apologies that I can't remember exactly what was what, because it was hard to hear in the restaurant & also my memory sucks.
- First course was literally a single tortellini. I almost laughed at the idea of being served just ONE of them, & imagining a chef trying to dress a SINGLE one. It was actually not my most favorite of all seven courses, but if you gave me a plate of these, it would be very, very good. I don't remember exactly what it was but it was like braised rib meat with mushroom. Mostly savory with no real contrast.
- Second course was a nice Asian-inspired fusion of flavors with a tempura buried in strands of a veg. Nice combination of cohesive flavors & texture.
- Third course was a super-small piece of foie gras, surrounded by a similarly-sized apricot & some greens on top of a paste & drizzled with a champagne reduction. Lots of flavors here & what looks like the first of the rest of the courses with what looked & tasted like Brussel sprout leaves.
- Fourth course was a piece of stingray. Never had stingray before, & the sauce it came with was slightly salty & savory, which was nice.
- Fifth course was two lambchops & probably the largest amount of food for any of the courses. More Brussel sprout greens on top of a turnip mash, if I remember right. This was nice, meaty, & delish. Weirdly enough, it also had a touch of leek ash... literal ash. Not really sure why other than for presentation.
- Sixth course was an aerated cheese foam with honey, nuts, all sitting on croutons. This was weirdly one of my favorites, as it was such a simple dish where you could enjoy all of the flavors distinctively, not to mention enjoy a foamed cheese from Quebec.
- Lastly, the seventh course was a sort of torte with a crispy leaf pastry thing sitting on top of slivers of pear & what was kind of like a pear'applesauce' with a divot to hold a pistachio filling. This was also one of my favorites as everything was different from each other, flavor-wise. Very nice.
- We also got some little pistachio'muffins' with a coffee-like cream on top as a bonus. Not bad, but not amazing.
There is also a VAST wine selection, ranging from $15 glasses to $6500 bottles. I feel bad that I'm not a wine sommelier to be able to appreciate all of the expressions & vintages.
This may seem like I'm being picky, but I'm doing that on purpose considering you would be paying $150 for food you may or may not enjoy. I still highly recommend the multi-course meals at least once to experience them.
They also charge $11 CAD for sparkling or flat water.
Definitely would come again!
After a few disappointing meals elsewhere in Tremblant, sEb was a breath of fresh air. We had the 4-course menu, & it was excellent value for the quality provided. I tried the deer for the first time; while game meat isn't my personal favorite, I could tell the chefs did everything possible to elevate it. It was'fall-off-the-bone' tender & clearly prepared with high technical skill.
The dessert was amazing, & the service was top-tier-attentive without being overbearing. The establishment is also incredibly clean; the mirrors were so spotless we actually thought they were another room! If you want a meal where you actually get what you pay for in Tremblant, this is the place.
Nous avons adoré notre expérience culinaire dans ce menu 7 services avec accords mets & vins. Chaque plat était une délicieuse surprise (choix du chef), très bien harmonisé avec le choix des vins & autres alcools. C'était pour mon anniversaire, & je peux dire que c'était mon plus beau cadeau. Le service était efficace, très courtois. Je recommande cette petite pépite de resto, très belle découverte pour nous!

This experience was amazing … we had the 7 course tasting menu… be ready for a culinary adventure… the food was some of the best I've ever had & I've enjoyed many a Michelin star restaurant… it was amazing. The chef pushes the envelope… but in an good way

Seb est l'un des meilleurs chefs dont j'ai pu déguster la cuisine, de plus Lydia notre hôte à offert un service 5 étoiles. Elle connaît aussi bien les vins que la cuisine, je conseille fortement ce restaurant pour vivre une expérience inoubliable.
Excellent meal with great wine. Server was very knowledgeable. Had the 4 course & my partner had the steak. All of it was really good. The chef's creations & flavor profiles really worked well together & the food was great. Great fine dining option.

We celebrated our 10 year anniversary at the restaurant with a 7 course, chef's choice meal. It was absolutely delicious. The staff was very attentive & positive. They were key in our overall experience.

My husband & I visited Seb L'artisan Culinaire to celebrate his birthday during our ski trip. First & foremost - WOW - I hope I can find the words to explain the amazing experience we had here! We did not expect to enjoy one of the best meals of our lives & were left awestruck after our meal. We indulged in the 7-course tasting menu with the wine pairing. We put our meal (& trust) in the hands of the Chef & were absolutely thrilled with each & every course that was carefully crafted & curated for us. The whole experience was simply perfection from start to finish. My husband is also a fine-dining Chef (who has worked at many of NYC's best restaurants) so it is extremely rare for him to be impressed - but he enjoyed every single part of the meal & commends the Chef for the authenticity & expertise in which everything was cooked. We cannot praise this restaurant enough & will be returning to Canada ASAP just for another meal! Such an incredible meal & one we will never forget.

The waiter was very nice & tried his best to make our stay enjoyable.
However there were quite a lot of things that didn‘t match up.
We asked for a vegetarian menu (or at least a single dish) in advance because we couldn‘t look at the menu before. When we got there they hadn‘t even started thinking about what to offer us & then quickly came up with a good but not very creative dish (noodles with mushrooms).
Even worse was how they handled the non-vegetarian order. I wanted a Filet Mignon which they hadn‘t available that night. Instead they offered me a Black Angus Filet which I ordered. The „Filet" had a huge tendon (so not really a Filet imo) that was impossible to chew or cut. I told the waiter who took my complaint to the chef who just replied that „he liked it that way"...not really how I expect a professional to react to criticism.
The worst part though was that they charged the full (Filet Mignon!) price. The piece of meat was worse even if I don‘t take the tendon into account & it wasn‘t prepared properly.
You might be more lucky than us & some of the ingredients wete actually made very well but the customer service (excpetion the waiter who tried his best) was absolutly aweful.
Wouldn‘t go here again.

Une des meilleure table gastronomique a cet endroit depuis son ouverture. Un gros Merci au chef Thomas Gagné qui a su nous concocté un repas qui a mon avis était de la haute gastronomie. Merci a notre spécialiste en vins & serveur Alexandre a qui nous devons le succès de ce souper. Merci a l'établissement SEB & a son propriétaire Sébastien Houle qui depuis plusieurs années a trouver la facon de nous faire revenir a son établissement par sa qualité exceptionnelle de repas.
Cette soirée fut un succès a 100%
