Overall, reviews describe Siboire as a warm, convivial microbrewery with a strong beer program and consistently good service. The atmosphere is repeatedly praised as welcoming and lively, well suited to evenings with friends or groups, and often noted for friendly staff. Beer stands out, with a broad and frequently rotating selection of microbrews, many IPAs, and solid house options that attract both IPA fans and casual tasters. Food generally earns favorable notes for quality and flavor, with some standout dishes mentioned, though a few reports point to pricey menus and occasional plate inconsistency or smaller portions. Service is commonly described as fast, attentive, and courteous, while a minority of reviews mention slower pacing on busy nights. Value is occasionally described as a touch high for the portion sizes, and parking can be tight, especially in winter. Noise levels can be lively or loud, particularly on weekends or on the terrace, but many still consider the overall experience enjoyable. Overall, it remains a popular spot for beer lovers and social gatherings, with a welcoming vibe, a strong beer lineup, and dependable service.
Highly recommend! The cheeseburger pizza is a must-try, & their selection of beer is top-notch - easily the best in town. Plus, you get a great view! We enjoyed a lovely walk in the park nearby to finish off the evening.
Visited on September 23, 2019, in the evening. Located in the very commercials section of King, but just off that street. it is their second brewpub not just in Sherbrooke but overall. BTW, I've visited all three of them. Not like the two others, this one is in a new building, two storeys & a bit bigger than the Dépôt location. The tap selection is about the same like the two others & you can't go wrong with what they got. Food wise, they specialise in pizza, like the Dépôt location specialise in fish & chips (including salmon), the pizza are not too big, good enough for one person, or you can share for a small bit, btw they are quite good. Very good service, the waitress even notice something wrong with our plates before arriving to our table. A very fine brewpub!

On nous a assis près d'une grande fenêtre . C'était vraiment chouette . Le service était impeccable . Serveur très drôle & gentil. La pizza était délicieuse , par contre le gnocchetti n'était pas à la hauteur de mes attentes. On reviendra certainement
We had "tartare saumon" (smoked salmon plate comes with salad & tosted bread) & pizza burrata also quite good. Good choices of beer (had NE IPA style) & a glass of wine white (Verre cep blanc, actually quite good dry white wine). Our server, Megan, was excellent, explained the choices in perfect English (we speak very little French).
The only bad thing about this place is that it is two hours away from where we live! The ambiance is one of a kind, the employees are very friendly & the pizza is the best one we've ever tried! The beers are very interesting & unique! The prices are very decent! Definitely a reason to visit Sherbrooke as soon as possible!

It was a big exciting day for the Missus & I. We drove in the Sherbrooke to do a Costco run, & then a quick visit Canada's Store for a pair of rubber boots. We had planned lunch at Siboire afterwards so our level of excitement was pretty high. Parking: Rock Star parking. Seating: Nice table upstairs- partial window-view. Service: Our server was prompt & professional & spoke the language of the clients. Food: I hade the beef tartare, & the Missus chose a prosciutto & arugula pizza. I've dined at some pretty prestige bistros over the years & the tartare they served me was absolutely on par with the best one's I've had in Montreal, & France. Bravo freaking Zulu Chef! Sweetie's pizza was delicious to according to said Sweetie. Again, kudos to the Kitchen! Drinks: White wine for the Missus because that's the way she rolls. A 0% alc brown beer for me because I'm driving. According to many sources the pour that I received was cause for litigation, & cause for much worse than that in Ireland where I'm told the barman's well-being would be forfeit. All in all though, the place was lively, the food & service spot-on, & their bar-person needs to find a job- elsewhere.
La bouffe était délicieuse, nous avons commandé le tartare de saumon, la pizza Cheeseburger & la poutine au smoked-meat. Le service était courtois & attentionné, sortie très agréable.
