This is THE SPOT in Sherbrooke.
Was driving back to the US from Quebec City & stopped here for lunch - exactly what we could've asked for.
The beer was DELICIOUS. The poutine was amazing. We also had the'tasting' of their fish & chips (basically, all 3 versions that they offer at this time) & it was phenomenal.
If you're visiting from out of town, or just driving through, check this place out.
If you're from Sherbrooke, well, you probably already know then.

Siboire Dépôt is the kind of place that makes you wish you lived nearby just so you could drop in all the time. Housed in a beautifully restored old train station, it has an atmosphere that feels both historic & lively. The building itself is worth a visit, with warm lighting, brick walls, & that unmistakable character that only an older structure can offer. It's one of those rare spots where design, history, & good food all come together effortlessly.
The staff were genuinely friendly, attentive, & helpful from the moment we walked in. Service was efficient without ever feeling rushed. I appreciated that the noise level was moderate enough to have an actual conversation, which made it perfect for visiting with friends.
I went with the locals' recommendation & ordered the Fish & Chips, opting for the three-fish sampler. It did not disappoint. The fish was fresh, perfectly cooked, & full of flavor. The batter was crisp & light, & the coleslaw on the side added a fresh, balanced touch. My friend had the venison burger, which looked & tasted fantastic. Everything about the meal felt fresh & made with care.
Siboire's beer selection deserves a special mention. They have an impressive range of house brews, & the hazy IPA I tried was excellent: fruity, aromatic, & balanced. It's clear the brewery takes pride in crafting quality beer that pairs well with their food.
The location could not be more convenient, right in the heart of Sherbrooke & within walking distance from my hotel. Whether you are a visitor or a local, it's an easy place to settle into for a relaxed meal & a great pint.
If I lived in Sherbrooke, this would absolutely be my regular go-to spot for good food, good beer, & good company.

Wow, quel spot! 🍺🔥
Accueil chaleureux, service rapide & ultra pro (beaucoup de staff - ça paraît!). Le lieu est magnifique, super bien pensé. Les bières à la belge? Im-pe-ccables! & le fish'n chips… une tuerie. Première visite, mais clairement pas la dernière! 👏

Fish & Chips de morue : miammm ! ! Juste bien cuit, fondant. Le meilleur de ma vie. Ça vaut le détour. Menu & service : correct. Ancienne gare, devenue marché public (lointains souvenirs des années '60 !), convertie en brasserie-resto : plein de charme. Bravo !

J'adore cet endroit pour son ambiance, son cachet. Les bières y sont délicieuses & il y a beaucoup de choix. On peut y prendre aussi le repas, les prix sont moyennement élevés cependant. L'accueil est chaleureux, le service est très bon. J'y ai mangé un Fish & chips au saumon vraiment impeccable lors de cette visite avec une bière dont le nom est Trop d'automne, parfaitement complémentaire.

Manque de musique sur la terrasse, la palette dégustation de bières 😍, la bière aux framboises 💕 wow. Je ne suis pas de type fruité habituellement, mais elle est très bien équilibrée, très goûteuse. Je l'ai adorée. L'assiette dégustation de fish & chips 😍. J'avais jamais mangé de fish & chips au saumon. Délicieux 😍.

Just arrived & stopped here for lunch. Had fish & chips (chose cod, other choice also available, haddock, salmon, etc.) which was very good (minor issue no malt vinegar) & salad parisienne - ceaser salad like with small cubes of jambon, also good plus a glass of white wine (Inspiration, good & dry) & an IPA - Bonheur, ~hazy IPA (decent, less hoppy than my liking). Our server Rebecca was friendly & very good.

Passant par Sherbrooke pour se rendre au Lac Mégantic pour l'éclipse solaire 2024 nous nous sommes arrêtés dans cette brasserie artisanale pour manger. Pas fan de bière en particulier, nous avons opté pour une dégustation de bière. Bon choix du serveur! Nous avons pris, en entrée, le petit pot d'olives, bonnes! Pour manger nous nous sommes partagés l'assiette (aiglefin, saumon & morue) de Fish & Chip. Service amicale & bonne ambiance. Mes goûts: La bière Sherbière est légère & bonne. Les olives sont délicieuses en accompagnement. Pour finir le meilleur des poisson est la morue!
