Waiter was attentive/prompt but he mumbled & was very hard to hear & understand at times. Though the support staff & floor manager were very helpful. Food was amazing! My partner & I both got tenderloin & shared three side, which were all fantastic. Our friend got the salmon, which was very generous & "grilled to perfection", & the prime rib... They didn't describe it much as they were too keen on devouring it. Everything was perfect! Beautifully prepared & very generous proportions.
The menu is dated. On the steak side, it's exactly what you would have gotten at any steakhouse 25 years ago. I had a Kansas cut, which was flavorful. The sides were a bit sad: the toppings on the Monte Carlo mashed potatoes were not generous, & the veggies were uninspired. On the sushi side it's competent but unimaginative. You can easily find much better elsewhere. The service was friendly but there were a few small mistakes (I had to ask for a steak knife, they left an empty wine glass on the table, etc). They are currently renovating part of the place, perhaps this will be the occasion for them to revamp things a bit? It would be nice for Montreal to have a truly innovative & upscale steakhouse.
Dinner for 4: The food was not fresh... 3 plates out of 4 were returned because one plate was overcooked, another undercooked with the wrong steak requested, & the fish smelled very bad & tasted funny. They ended up replacing the fish plate with a salmon plate, which was much better. The other two steaks were replaced without a problem. The waitress's service was super nice. I have nothing to say about that. We took two bottles of red wine for our meals & both bottles were very cold. Red wine shouldn't be that cold... it spoils the taste. Will not be going again.
Nice restaurant that I thought was in the Fairmont hotel but actually right next to it. I had the Walleye filet fish which was very flavorful along with the rice & veggies. My friend had the salmon that looked delicious as well & his plate was empty afterwards. The staff was nice but I felt like our waiter didn't introduce himself to us. It was my birthday which i noted on the reservation, but not acknowledged in any way. Tasty bread & drinks.

Très beau restaurant assez chic avec un service impeccable le repas était délicieux moi j'ai pris côte de boeuf au jus délicieuse avec une entrée de moelle dans l'os & une frite épicé & une bière le tout pour $105 cela vaut la peine je recommande
The bone-in rib cap steak is a unique find at steakhouses. It was delicious & fired beautifully. I enjoyed with the seasonal vegetables & cocktail while seated at the bar. I recommend & will return to try other menu items.
Exceptional service, fine dining! The restaurant accommodated us for a large group minutes before arriving & did a fantastic job! Must try their sushi or meat!
Pour être honnete, meilleur steak vieilli 90 jours de ma vie, cuisson parfaite. Les sushis etait très frais, vraiment recommandé. Les contres maintenants: tartare de boeuf beaucoup trop piquant, sauce au poivre médiocre, vraiment décevant pour un steak house, beaucoup trop réduite, beaucoup trop de poivre, je ne crois pas qu'il y avait de la crème fraiche ni de cognac. Une discution avec le chef s'impose.
It was a good experience overall. Service, food, & drinks. It's a nice place to go to for special occasions. I highly recommend the Poseidon's Tower (seafood mix). The half portion easily covers 3 folks.

Was here on Saturday, F1 night. Had an absolute garbage dinner at The Keg the previous night (only place to get a seat unfortunately) The great experience I had at Vargus was due to the bar staff: Joanne & the blond girl (I apologize but I didn't get her name) These 2 girls are the most outgoing, qualified, personable bartenders /hostesses I have ever been around. Friendly from the initial "hello", great to chat with about things while still servicing the busy bar & service area. Smiles the whole time & it was crazy busy. Two of the most genuine people I have interacted with in a very long time. I'm from Ottawa & I would come up for a night just to have dinner because of these 2 girls. I was with a buddy, in for the weekend, & we had a great time. Steak & sushi were fantastic as well. Great place to have dinner for sure & I will be back. Thanks to everyone for the great experience :)
VIP playger & Filet Mingon with Kamakazi roll, highly recommended.
