Came here for a date night for the first time, & wow the meal was amazing. Started off with the small plate of sushi. 10/10 super fresh. I had the rib eye steak I believe & it was cooked to perfection. Ended our night with the strawberry cheesecake & let me tell you it wasn't your ordinary slice of cake. It was presented so beautifully I didn't even want to eat it lol (but I did) & it was delicious. 10/10 would recommend

I am visiting from Toronto & met a couple Montréal friends for lunch. The lunch menu is a GREAT deal! I had the Chef Special, a tasty tender meaty lamb shank, for only $26. & a glass of Douro red for $12. Our waiter Yannick was very friendly & helpful. Would highly recommend Vargas for weekday lunches.
Had a very great evening at Vargas. Nice vibes & environment. Food was fresh & delicious I definitely recommend the salmon tartare as an entree. Tamara gave us a great service!

The food was delicious. I had the 8oz filet mignon with peppercorn sauce. It was cooked just right, & it was tender & very tasty. My wife had the organic salmon meal with deep-fried cauliflower. The salmon was fresh & cooked just right with a delicious mango sauce. Personally, I don't like anything deep-fried. Perhaps, the chef should consider another method to cooking the cauliflower. My friend had the roast beef. Unfortunately, it was not tender. The roast beef should be almost melt-in-mouth tender, & could have had more spice… Otherwise, I would definitely recommend this restaurant. Our waiter Christo, was very friendly, knowledgeable, professional, attentive.
Best rib steak I've ever had !!! Get the dry aged one !!! Also, their Diane sauce is EXQUISITE !!! I wanted to take some home !! Amazing eats. Highly recommend 😋😋😋
C'étais ma deuxième fois hier,j'ai fais mon anniversaire ici,moi & mes amis on a adorer notre experience,service impeccable,la cuisine étais excellent,le steak & les entrés étais super bon,les cocktails aussi,le directeur étais super gentil & professionelle & le serveur aussi,je recommande cette endroit & je retournerai à 100%.

The food here is just ok I feel but Ive always been very satisfied with the service & even though the food is just ok i must say i keep going back for the sushi pizza which actually looks nothing like a pizza 😂 it looks like a butterfly on some days & tear drops on another day. I do recommend trying it though it is sooooo tasty.
Nous avons eu la chance de partager un repas entre amis samedi le 8 mars 2025. L'ambiance était vraiment agréable & que dire de la nourriture, tout était excellent. Roberto, notre serveur & son équipe, nous ont accueilli comme des Rois. Très bonne explication des différentes coupes de viande en fonction de leurs cuissons, cela m'a permis de choisir un filet mignon que j'ai vraiment apprécié. Roberto a été la clé de la réussite de notre soirée, je vous le recommande sans hésiter. Bravo & Merci.
I attended a cocktail hour here during a business trip. The food was delicious. Every hors d'oeuvre tasted so good. The space was great for chatting. The decor & ambiance was excellent. The lamb was so tasty. Recommended for business functions as well as a fine dining outing.

The food was exceptional. The Salmon Wellington & Sushi (specifically the Omakase) are for sure recommended. The fries are out of this world. The servers are super friendly & caring about the service. This is definitely the place to try high quality food in Montreal.
Excellente soirée avec un personnel très gentil & professionnel (malgré un long moment d'attente à notre arrivée). Superbe ambiance des Fêtes, les sushis étaient WOW ! Mais la morue beaucoup trop cuite. Autrement, nous recommandons, c'était vraiment super.
In Montreal for vacation & chose Vargas for our dinner the first night. They had just reopened & have a new menu. We shared the ahi tuna tartare, my husband ordered filet with shrimp & scalloped potatoes for his sides & I had the salmon wellington. Every bite was delicious, perfectly cooked & properly seasoned. I wish we had room for dessert. Our server Roberto was great. Highly recommend Vargas!
Restaurant haut de gamme, très propre, bon service, cuisine bonne avec assiete belle & fournit, mais salle bruyante avec musique un peu forte, les clients parlent donc fort. Pas adapté poir des enfants même si le personnel s'adapte. Mais on recommande.

Très beau restaurant assez chic avec un service impeccable le repas était délicieux moi j'ai pris côte de boeuf au jus délicieuse avec une entrée de moelle dans l'os & une frite épicé & une bière le tout pour $105 cela vaut la peine je recommande
The bone-in rib cap steak is a unique find at steakhouses. It was delicious & fired beautifully. I enjoyed with the seasonal vegetables & cocktail while seated at the bar. I recommend & will return to try other menu items.
Pour être honnete, meilleur steak vieilli 90 jours de ma vie, cuisson parfaite. Les sushis etait très frais, vraiment recommandé. Les contres maintenants: tartare de boeuf beaucoup trop piquant, sauce au poivre médiocre, vraiment décevant pour un steak house, beaucoup trop réduite, beaucoup trop de poivre, je ne crois pas qu'il y avait de la crème fraiche ni de cognac. Une discution avec le chef s'impose.
It was a good experience overall. Service, food, & drinks. It's a nice place to go to for special occasions. I highly recommend the Poseidon's Tower (seafood mix). The half portion easily covers 3 folks.
