The steak was definitely the star of the evening. Cooked exactly as requested, it came out tender, juicy, & full of rich flavor. You can immediately tell the quality of the meat is top-tier, & the preparation is done with precision. Each bite had that perfect balance of char on the outside & a melt-in-your-mouth texture inside.
What sets Vargas apart is the option to mix things up with sushi alongside your steak. It's not something you see at every steakhouse, & it adds a fun, elevated touch to the experience. The sushi was fresh & well-prepared, making it more than just an afterthought on the menu.
Service was professional & attentive, helping create a smooth & enjoyable dining experience from start to finish. Overall, Vargas is a great choice if you're looking for a high-end steak with a bit of variety, all in a lively Montreal setting.
This is one of the best steakhouses I've ever tried. Everything was amazing. Benjamin was very helpful, & the service overall was excellent. The steak was perfectly cooked & the sushi was very fresh. The atmosphere was elegant & comfortable. Definitely coming back again.
If you had an option to only try one restaurant in Montreal, consider this on the top of the list!
Good quality is good, nice ambience, service staff were excellent. Pretty much your typical steakhouse. Not sure the value for dollar spent is there, but overall decent.
Food was good but overpriced, dessert was also fine. Drinks were good. Overall good place but nothing out of the ordinary for a steakhouse
The menu is dated. On the steak side, it's exactly what you would have gotten at any steakhouse 25 years ago. I had a Kansas cut, which was flavorful. The sides were a bit sad: the toppings on the Monte Carlo mashed potatoes were not generous, & the veggies were uninspired. On the sushi side it's competent but unimaginative. You can easily find much better elsewhere. The service was friendly but there were a few small mistakes (I had to ask for a steak knife, they left an empty wine glass on the table, etc). They are currently renovating part of the place, perhaps this will be the occasion for them to revamp things a bit? It would be nice for Montreal to have a truly innovative & upscale steakhouse.
The bone-in rib cap steak is a unique find at steakhouses. It was delicious & fired beautifully. I enjoyed with the seasonal vegetables & cocktail while seated at the bar. I recommend & will return to try other menu items.

What do you get when an upscale, oldschool steakhouse specializing in surf 'n' turf tries to cater to an increasingly diverse, health-conscious clientele?
A group menu of gravy-drenched meat & unoriginal sushi, with sides of iceberg salad, bland vegetables, tastes-likes-it's-from-a-can tomato soup & plain mashed potatoes, garnished with an oh-so-elevated sprig of parsley.
Would I have come here on my own? No. I'm clearly not this restaurant's target demographic.
Do I appreciate the effort they made to include vegan & vegetarian options on their group menu, like breaded cauliflower? Absolutely.
Did I imagine the chefs in the kitchen exclaiming "oh God, we have to include vegetables" in desperation? Many times.
Did my meal remind me of sad wedding venue or cafeteria food? Yes.
But if you're planning a group dinner, it sure as heck beats a steak-only menu. Plus there's lots of seating, & service is quick & efficient, so you'll be back at the office in under 2 hours.
