The offered formula will evolve according to our desires and the time of the year. We offer three different options: the Evening Tasting Menu, cooking classes, and tea time. We welcome 14 people at a time, to have the time to host you as if you were at home.

We operate by reservation only, reservations are made online. Events are announced one month in advance on the website and you must purchase a ticket to attend an event.

While reservations can be hard to secure and portions run on the smaller side, the overall balance of savory and sweet, the thoughtful wine and tea pairings, and the celebration of terroir make the evening one to remember and worth repeating.

This was my 6th Michelin star restaurant in the last 10 days. I could have been saturated or bored. But No. Sabayon delivered a unique repertoire of flavours & textures that clearly distinguish itself from any restaurant. Among the dishes, the amuse-bouche with the mushroom broth, the scallops, maitake, vert 2.0 & chocolate dessert were divine. The setting was very convivial & the service familial. In sum, it was an outstanding experience that needs to be repeated in the near future.

Première expérience dans un restaurant étoilé Michelin. J'y suis allé pour l'heure du thé & j'avais très peu d'attentes car je ne suis pas un'foodie' & je n'ai pas particulièrement la dent sucrée mais on m'a invité du coup je suis allé nonchalamment.

J'ai reçu une claque, de l'extase pur, j'ai l'impression que j'ai de nouvelles papilles gustatives qui ont poussés, j'avais l'impression de goûter des nouveaux aliments qui n'existent pas encore, les textures sont parfaites, tout est beau visuellement, même les assiettes sont en porcelaine & très belles. Le thé est excellent & complimente à merveille le dessert entre chaque bouchée.

Si j'avais une seule critique à faire c'est la première impression des cuillères, elles ont plein de'scratch' & de micro-abrasions comme si elles avaient fait 500 lavages dans un lave-vaisselle LG. Il faudrait les laver à la main. Le reste des verres/assiettes sont immaculés mais pour un restaurant de ce'standing' donnez moi une cuillère qui sors de la pub de Finish Jet-Dry. 😤

Bref, c'est une expérience à faire une fois dans sa vie, il mérite amplement son étoile! ⭐?

Enjoyed a truly exquisite meal starting with some delightful amuse-bouche, followed by asparagus with smoked eel, calamondin. Then came the incredible lobster with morel mushrooms, white asparagus, & fresh herbs, which was absolutely delicious. Next was Arctic char with caramelized onion & mushrooms, followed by grilled mushrooms with arlette, sabayon, & celeriac. For dessert, I had rhubarb granite with whipped cream, roasted almonds, & edible flowers, then chocolate mousse with pecans & wild caraway, finishing with mignardises. Each dish was a work of art, especially that lobster... it was incredible!

That Michelin star is well deserved. We'll be back for the next season.

Magnifique expérience au Sabayon. Le menu 7 services est vraiment incroyable! Plats raffinés & bien exécutés, 3 desserts pour finir dont un, celui à la fraise, digne d'une étoile michelin tellement ctait époustouflant! On a hâte d'y revenir. Nous avions aussi pris l'accord mets vins, pour ma part j'aurais aimé avoir un choix de vins un peu plus haut de gamme. Ctait bon mais moins dans mes goûts.
