Review Summary

Reviews emphasize Sabayon as an intimate, refined dining experience built around local Quebec ingredients, a tightly curated tasting menu, and impeccable, attentive service. The tea program and desserts are frequent standouts, with guests calling the tea time divine and the desserts memorable. Dishes are described as inventive and beautifully presented, ranging from delicate seafood courses to rich finales, and the overall balance of sweet, salty, hot and cold is repeatedly praised. Reservations are hard to come by due to strong demand, but the experience is deemed worth the effort, with several comments noting that the meal can unfold over hours and feel special for celebrations. The pairing options, including wines and teas, are highlighted as thoughtful and well executed, and the team is praised for guiding guests with warmth and expertise. Overall Sabayon is seen as a standout Michelin star destination that many would return to for another unforgettable evening.

After months of trying to secure a reservation, we finally had the pleasure of dining at Sabayon - & it was more than worth the wait.

My wife & I visited with another couple, & from the moment we arrived, we knew we were in for something special. Chef Patrice addressed my friend's allergies with impressive attention to detail. The care he took in crafting each dish was evident, & his ability to adapt the tasting menu without compromising flavour or creativity was masterful.

We had the tasting menu & opted for wine pairings, & the experience was nothing short of exceptional. Patrice presented each course, proudly highlighting the use of local, seasonal ingredients, which added a meaningful layer to the story behind each plate. Every dish was beautifully balanced, inventive, & absolutely delicious.

Equally commendable was Marie-Josée, who guided us through the wine pairings with passion & precision. Her selections not only complemented each course perfectly but also reflected the same local-first philosophy that made the entire meal feel deeply connected to its place.

The harmony between kitchen & cellar, between chef & sommelier, made this evening unforgettable. Sabayon is not just a restaurant - it's an experience, & one we can't wait to repeat.

Amazing place. We were lucky to book it. Trying all these chef-d'oeuvres from local products was a great experience. I wouldn't like to evaluate the service because the restaurant is running by only 2 people, so you must inevitably understand the time it takes to serve 14 people. Imagine it your are doing yourself & your wife. Even you are great in it. Not easy. I didn't understand some taste pairings like grilled cucumbers with lobsters, in my opinion cucumbers do not benefit at all but the rest of the menu was really perfect. Pistachio ice cream parfait is a killer dessert. Cocktails are strong & good. Wine pairing also good. Thanks for the experience
