Nous avons eu une expérience absolument remarquable chez Mastard.
Chaque assiette était réfléchie, précise & magnifiquement présentée, sans jamais perdre l'essentiel : le goût. Les produits locaux sont mis en valeur avec énormément de finesse & de créativité. Mention spéciale aux sauces & aux textures, qui apportaient une profondeur incroyable à chaque plat.
Le menu dégustation était parfaitement équilibré du début à la fin, avec des créations à la fois élégantes, surprenantes & réconfortantes. L'accord mets, vins & cocktails était tout simplement excellent & rehaussait parfaitement l'expérience.
Le personnel était professionnel & attentionné. On comprend rapidement pourquoi le restaurant a obtenu une étoile Michelin.
Une expérience gastronomique mémorable à Montréal que je recommande sans hésiter.

I enjoyed my dinner at Mastard. The service was impeccable. Food, especially the sauces, were creative.
Mastard, under the direction of chef Simon Mathys, is one of the only Michelin-starred restaurants in Montreal & easily offers one of the most impressive tasting menus in the city. This was my second visit, & the $90 carte blanche menu once again proved to be exceptional value for the level of technique, sourcing, & thought behind each course, with an optional wine pairing that is genuinely well-curated & purposeful rather than an afterthought.
The cooking is modern, precise, & deeply ingredient-driven. Expect impeccably cooked seafood, razor-clean sauces, & dishes that balance richness, acidity, & texture with confidence. Vegetables are treated with as much care as proteins, often serving as the foundation of a dish rather than a garnish. There's a strong sense of seasonality & Quebec terroir throughout, filtered through a contemporary, restrained lens-nothing feels busy or overworked.
What stands out most is restraint. Flavors are bold but controlled, plating is intentional without being precious, & every dish feels complete. This is a kitchen where technique clearly serves flavor, not ego.
I've eaten at over 20 Michelin-starred restaurants around the world, & Mastard offers some of the best value I've encountered. Thoughtful, ambitious cooking at a price point that feels almost out of place for the quality delivered. Bravo.
Mastard est le meilleur restaurant où j'ai mangé. Étant énormément habitué à la cuisine européenne, j'aime cette touche personnelle & unique que le chef apporte à ses plats. On sent son amour du Québec, de ses produits & de sa culture. Ce qui est le plus époustouflant reste l'alliage que ses sauces créent dans ses plats : elles sont ce qui élève chaque assiette bien au?delà d'une simple présentation de bons produits.
Lors de notre visite, nous avions une personne avec des restrictions alimentaires, & Mastard a su lui offrir une expérience respectant ses contraintes tout en restant absolument époustouflante.
Nous avons déjà hâte à notre prochaine visite.

Best meal I've had from a one star Michelin restaurant.
Absolutely zero misses. This meal checked every box I have for fine dining: unique local proteins (walleye, guineafowl), creative swings, & a sauce game that explored the whole flavor spectrum instead of just relying on acidity.
All the dishes were fantastic, but several dishes lingered with me. Braised cabbage & uni, Rabbit & oysters, Miso Walleye, & the Sunchoke ice cream. The Rabbit & oysters sounded like a riff on the famous'Oysters & Pearls,' but the execution was entirely its own beast. The smoked oyster sabayon elevated the lean rabbit while adding necessary moisture, & the oyster itself was almost raw yet smoked, which gave it a plush, velvet texture I rarely find in cooked oyster dishes.
Then the Miso Walleye. It was like cod but lightly braised in miso, giving it a funky finish that played beautifully against the dish's earthy elements. They followed it with a pasta filled with the same fish, & it was leaner, with a nice peppery kick to close out the seafood chapter.
Another surprise was the Guinea fowl. The bird is native to Africa, but this one came from a local farm that imported & raised it here. It looked like turkey on the plate, but the fat was as rich as duck & the meat as tender as a chicken thigh, all just anchored by onion & shallot purées. It wasn't the most distinctive dish flavor-wise, but given how conservative fine dining usually is with birds (chicken, duck, squab), I really liked the choice to work with something less familiar.
Undoubtedly my favorite meal in Montreal so far. It's the ultimate proof that you don't need luxury crutches like wagyu or caviar to make a dish special. The reservation was a pain to snag, but I'd absolutely make the trip again just to see what they do next season.
Magique ! Nous nous sommes régalés du début à la fin. Les plats sont originaux, mais si bien équilibrés. & que dire des sauces… incroyable ! J'ai notamment apprécié la note du début présentant l'équipe qui travaille au quotidien pour nous faire vivre une si belle expérience. Bravo pour cette étoile bien méritée !
Très belle soirée,excellents produits qui mettent les Québec à l'honneur,cuisson juste,mention spéciale pour les sauces & différents condiments.Belle idée le service avec les explications par les cuisiniers.Étoile Michelin mérité.

Dans l'écrin chaleureux de Rosemont, Mastard incarne la quintessence de la gastronomie de terroir : cinq services d'une précision quasi scientifique, magnifiés par des sauces & émulsions d'une finesse inouïe. Une expérience culinaire distillée par un très grand chef où chaque bouchée est une toile vivante, digne d'un musée gastronomique.
Best tasting menu I've had in Montreal, & I've done many. I absolutely loved my time here & would recommend it to anyone who truly loves food & good ingredients. If I didn't have manners, I'd have licked every plate clean.
Every dish was a hit, from start to finish. Love the work on sauces & emulsions, so much depth & flavor. They all had this beautiful marine salinity. Could have had a whole meal of just bread & sauces.
Highlights for us were the foie gras & lobster tartelette, the calmar sausage & Cornwall chicken. The meringue dessert was also delicious.
The food is sophisticated, but it also makes you happy. De la vraie cuisine gourmande. It's not overly complicated, it is easy to enjoy, straight to the point. Beautiful ingredients, razor sharp techniques & execution.
Thank you to chef Mathys & his team, I had a spectacular time in your restaurant.
My only criticism, & it might be a big deal for some, I find the wine list & pairings not to be at the same level as the fantastic food offered. I'd offer more classic wines, with more depth.
Most of the wines served follow the funky/light/nature wine trend we often see in the city, & I think it doesn't compliment the food as well.
We went there per a chef's recommendation & it was such a delightful discovery.
Every single dish was delicious & the sauce that came with them was so originally tasteful.
We had reserved the bar by mistake but it turned out as an even better experience.
One of the waiters told us they change the menu every 3 months, can't wait to discover more!
