Sushi Nishinokaze est un sushiya Edomae intime de 8 places situé à Montréal, dirigé par le chef-propriétaire Vincent Gee, formé au Canada et au Japon.
Nishinokaze, qui se traduit par « Vent de l’Ouest », reflète sa mission de mettre en valeur la saveur naturelle et pure des fruits de mer sauvages, locaux et importés.
La base de notre cuisine, le shari (riz à sushi), est préparée avec du riz cultivé naturellement et du vinaigre rouge artisanal directement sourcé auprès des producteurs.
Notre espace a été conçu par les architectes renommés de Montréal et Tokyo, Justin Nguyen (David Adjaye, SHoP) et Taichi Kuma (Tailand, Kengo Kuma and Associates), fusionnant harmonieusement le langage du design ancien et moderne.
En tant que « galerie vivante », nous présentons des céramiques anciennes et contemporaines dans leur état le plus beau : en usage. Notre collection inégalée, renouvelée chaque mois, couvre plus de 5 000 ans de poterie japonaise, coréenne, chinoise, vietnamienne, moyen-orientale et occidentale.
Nous offrons une sélection soigneusement élaborée de sakés rares, de vins de Bourgogne, de Champagne et de vins naturels.

Crazy quality & sourcing but the chef & team is so humble & knowledgeable.

One of the best restaurants in the city, & the most impressive omakase I've had! A must try!
Incredible experience & totally worth it. Every piece of tableware is carefully curated as is the art displayed. The food was honestly fantastic & it was a pleasure to witness the chef precise movements & mastery. Notably the tuna & Matane shrimps were really exceptional. The atmosphere is really calm & the noise level kept to a minimum which I really appreciated. I said jokingly to my husband that it's actually like going to the spa but you can actually eat & drink.
Service is efficient & discreet. It is worth noting that this is also a no tip establishment which is definitely very Japanese. On a personal note, I appreciated the Toto toilets, this is always a plus. We also has a little chat with the chef at the end of the meal, he is very friendly & we did exchange a few words about pottery, art, his life & upcoming Japan trip. A delicious evening,
we will definitely be back.

I am an Asian antiques dealer based in Nagoya for the last 40 years. Even in Japan today, a restaurant using this level of pottery is incredibly rare.
It's like you sleepwalked into a plane to Tokyo & woke up right in there. Phenomenal to have this in Montreal. I was lucky enough to do a few edomae right in Tokyo & in NYC & this is absolutely on par with what I experienced. The produce is all seasonal & the care by the chef & staff is outstanding.
Cannot recommend enough if you want to have a luxury sushi experience.
A superlative experience. Easily the best sushi in Montreal & probably some of the best you have enjoy outside of going to Japan. Plus the list of champagnes are excellent.
Chef was incredibly knowledgeable & immaculately precise. The server was polite & often knew what we wanted before we thought to ask. The 21 courses were an honour & a privilege to partake in... don't know what else I can say: go, enjoy & (later) dream about Nishinokaze! 😄
