Sushi Nishinokaze is an intimate, 8-seat Edomae sushiya in Montreal, led by Canada and Japan trained chef-owner Vincent Gee.

Nishinokaze, which translates to "West Wind," reflects his mission to showcase the pristine natural flavor of both local and imported wild seafood.

The foundation of our cuisine, the shari (sushi rice), is crafted using naturally grown rice and artisanal red vinegar sourced directly from the producers.

Our space was designed by acclaimed Montreal and Tokyo-born architects Justin Nguyen (David Adjaye, SHoP) and Taichi Kuma (Tailand, Kengo Kuma and Associates), blending old world and modern design language seamlessly.

As a “living gallery,” we present ancient and contemporary ceramics in their most beautiful state: in use. Our unparalleled collection, which changes monthly, spans over 5,000 years of Japanese, Korean, Chinese, Vietnamese, Middle Eastern, and Western pottery.

We offer a carefully curated selection of rare sake, Burgundy, Champagne, and natural wines.
