I was hoping for a better gastronomical experience; we were a group of 5 so we shared all the plates on the menu. The beef tartare wasn't seasoned & had an overpowering ranch style sauce, the pork was a bit overcooked & the 2 fish dishes had a very similar sauce. It was all good but no wow from any of us..
I truly feel like I can't oversell this place. In my two visits so far, Salle has transformed my opinion of four different vegetables (for the record: leeks, chard, rutabaga & mature spinach).
Each dish I've had pairs one classic, simple aspect executed perfectly, & a surprising element.
For example, the leeks with two sunflower seed sauces, which were available both times I visited. Perfectly cooked, custardy leeks with a pair of sauces I never would have expected to be so balanced, smooth, yet distinctly flavored of sunflower seed.
Or the pork chop with chard & carrots; the pork chop itself was simple. Perfectly pan-cooked (I compared the texture to a low & slow prime rib) but accompanied by tender chard & an apple jus that was barely sweet, but so savory I was mopping up every drop with the house's lovely sourdough before letting that plate leave the table.
Other notable memories include a tartare that brought a tear to my eye, a poached pear & buckwheat cream that defied explanation, & a lovely non-alcoholic chamomile infused cranberry drink (though the wine selection is thoughtful & extensive in spite of Salle's small footprint).
The place is tiny, & the fact that I got a same-day dinner reservation still feels wrong to me. This feels like the kind of place with a waiting list, & if I had waited months instead of hours for this same meal, I would have been no less pleased.
Front & back of house staff were both friendly, happy to serve & talk with us. I left full, happy & enlightened, & I don't think you should leave Montreal without stopping by for the same treatment.
A truly incredible dining experience, one for the books. We had the pleasure of sitting at the counter & were able to watch the care, precious & love that went into every dish from the efficient kitchen crew. Brendan's wine recommendations were exceptional, his attention elevated our experience in every way. We worked through 5 or 6 courses & each bite was delightful. We leaned deeply into the summer produce bounty & seafood & the flavors were complex, nuanced & layered. Every drop of sauce was soaked up by the delicious bread. This dining experience was the star of our trip to Montreal. Thank you, team, for a truly memorable night. If this restaurant were in Brooklyn, we'd be regulars, truly.
We've been coming to Montreal for 15 years in the summer & have followed several chefs/restaurant managers as they deepen their talents. The current iteration of Brendan's Salle Climatisée achieves one of highest pinnacles of Montreal's special experiences: well-conceived & excellent local fresh & seasonal exquisite bites. I couldn't say a word while eating the poached lobster & the accompanying Hof Kelsten bread, which helped me get every last drop of the sauce. The halibut, green bean salad, & carrot bread pudding brought similar pleasures. A fun atmosphere, convivial staff, & a great wine selection. Can't wait to go back.
Amazing food & service. I absolutely loved the halibut with the morels. The sauce was divine. I have never eaten such good radishes too with the whipped ricotta.
I've been here twice, the first was was mind blowing. The second time I went it was a different menu, however it was still delicious. I'm always blown away by the sauces. My favorite dishes so far have been bigorneaux, pot & oseille, I could eat this every day of the week & the pork with the sauce of chasseur was insane. The pork itself was good but the sauce was on a different level.
When all you have is a picture of leftovers-& believe me, not a single bite or drop of sauce was left on any plates-it truly means the food was absolutely delicious! Tonight's dinner at @salle.climatisee was an absolute blast, with a cool host, a fantastic atmosphere, & scrumptious food from appetizers to desserts. Salle Climatisée is by far the best restaurant in Montreal.
We chose this restaurant because of its inclusion on the list of Canada's 100 Best restaurants list. It most definitely belongs on this list & should perhaps rate much higher than its current place at number 50 - one of my best meals ever! The dishes are fresh & creative - we particularly enjoyed the vegetable forward dishes (cucumber salad, cauliflower), the char (melt in your mouth!) & the sticky toffee pudding. A simple but perfect menu! The natural wines were surprisingly enjoyable as well. & Jess was a fantastic server - keeping our bread plate well stocked to soak up all the mouthwatering sauces!
