My fiancé & I had the BEST experience here. A+ food, service, & atmosphere! We were visiting Montreal from Boston & spontaneously chose Projet Pilote for dinner (based on the reviews!) while we were a few blocks away at Quai des Brumes, after enjoying a wonderful folk duo's set. From the moment we walked in, it was such an enjoyable evening! We shared a fun laugh with the friendly host about how we speak English but we enjoy practicing French. Our server Ben was awesome! He made us feel so comfortable, like we were all friends right away! My cocktail, l'abricot melba, was unique in the best way. Our dishes, the striped bass & the Toulouse sausage, were both such delectable combinations of flavors. We appreciated the smaller portion sizes; it was the perfect amount of food! The sauces were so tasty that I joked to Ben I wanted something to soak up the leftover sauces on our plates & he offered to bring us bread. I said no thanks, but I actually should have said yes to the bread because the sauces were that good! We then made room for a mouthwatering chocolate mousse that we paired with a dessert wine. C'etait parfait!
Best bar in the plateau, super friendly staff , amazing food (specially the smash burger & gourmet fries) great cocktail selection & the beer is always perfect!

Excellent experience, especially the helpful & friendly staff! All the entrees & drinks we ordered were fantastic. Project Pilote is definitely a high point of our visit to Montreal!
I'm a regular & I can say this is definitely somewhere to have a drink to catch up with a friend or have a simple nice date. If you come to just pass by & have a cocktail, this is definitely the place. If you're here to also eat, you won't be deceived! They make both their menu & their cocktail menu seasonal (with & without alcohol). The head bartender also makes his own non alcoholic liqueur so for the people that don't drink, this is your place! The creations there are as unique & as personalized as possible. The entire staff is friendly & I always end up in a small conversation with each & every one of them. I also pay different totals every so often so I won't put a specific price but I promise you won't be deceived at Projet Pilote!
I'll be honest - I had no intention of going to Le Projet Pilote, I didn't even know it existed. The original plan was to go to La Banquise for dinner, but upon arrival, we realized that the wait was an hour, so my friends I pivoted & decided to just go to the restaurant next door to La Banquise - which happened to be Le Projet Pilote, where I had THE. BEST. MEAL. OF. MY. ENTIRE. LIFE. I'm not exaggerating when I say that - truly everything we ordered was a total knockout. My friend ordered an old fashioned & said it was in her top three that she's ever had (which is an incredibly high honor). To eat, we ordered the mushroom toast, scallops, truffle parmesan fries & the gnocchi to share, & each dish was more spectacular than the last. I realized at Projet Pilote that I'd never truly experienced real gnocchi before-theirs was so incredibly light & pillowy, unlike anything I've ever had. The truffle parmesan fries were outstanding-easily the best I've ever had. Unlike other places that rely on drenching fries in low-quality truffle oil, these struck the perfect balance. They were beautifully crisp on the outside, tender on the inside, & the truffle flavor was present without being overpowering. The scallops were perfectly prepared, & although we were full after our dinner, we knew we just had to try the desserts. We ordered the strawberry shortcake dessert & I forget the name of the second dessert - but both were spectacular. The second dessert we ordered was a hundred layers of the most delicate paper-thin pear sheets, baked into a pie & served with homemade rum raisin ice cream on top - you could taste the rum in the ice cream! In summary, go here, order everything on the menu & spend the rest of your days dreaming about going back.

I must say I had zero expectations going in, I didn't know much about this place & we were just looking for a quiet place to have a drink & covered from the rain. I really enjoyed my visit, we stayed almost 3 hours.
The layout works, it's comfortable, the decor is pretty nice. The cocktails are good & creative. Staff was friendly.
There are some food options, quite limited menu. Our food was ok but I found it too expensive for what it is. Next time, I'll stick to drinks only.
So so great - owners were on site & so engaged. Fries were so fresh...scallops so perfect...everything on tap so curated. There is a passion & a newness here!!!
We had an excellent time here; this was our neighborhood bar on our visit to Montreal. The service was impeccable & the bartenders fast friends. Such a friendly & fun vibe, made us feel like we could be exactly ourselves. The staff takes such good care with the cocktails, & they were absolutely stunning. Can't say enough good things!
Tried a bunch of stuff including a few of their seasonal offerings. The salad was absolutely unique. I've never had anything like it before & it absolutely slayed.
The chips & dip were incredible. They were so good that I ordered some fries to finish off the dip. The fries were tremendously okay.
Wasn't planning on getting the smash burger, but then I smelled it when it was delivered to the table next to me. Did not disappoint. Didn't get it with bacon so can't comment on that, but with everything else it was delicious & well-rounded.

Very pretty micro brewery & distillery with a nice atmosphere to meet friends & have a bite. The service is amazing & we loved to sit at the bar & chat with the chefs & bartenders. The cocktails are really really amazing! The beer is a little to wild for my taste. I like the food, small portions, but high quality. Thanks to the staff who recommended us lots of cocktail bars etc :)
This place has quickly become a favourite for my friends & I. We love coming in to try their tasting menu every month & the cocktails & wines/ciders are also excellent. Reasonable price & super friendly staff
The interior is pretty, & the staff is nice & friendly, but the beer itself is not extraordinary. I wouldn't say I'd come back just for the brewery; it's not my preferred choice. Standard 3 Brewers is much better, while Brewskey & Messorem are the best, Memento & Vagabond are nice options too & far better for the beer itself. I tried their white wine, though, & it was okey. The food is tasty, but the portions are rather small. Three stars for interior, cleanliness, & tasty snacks.
Throughout the years I have been going to Projet Pilote for a couple of drinks, some times food & celebrated my birthday here last year. The service never disappoints! In fact it has been consistently excellent, friendly, attentive & over all well managed. The atmosphere is pleasant because the staff work well as a team & they take pride in their work place. We are lucky to have this gem in our neighborhood! 🤘🏻

As Americans from Vermont we have always found the Montrealais warm & welcoming. We share elements of a common culture & are treated like cousins in Montreal. Le Project Pilote is no exception. We were welcomed warmly, entertained by the spirits manager & the bar tender, & enjoying excellent beer & cocktails. They even claimed to understand my poor French, kind of them! The ambiance is of a friendly, local pub but don't be fooled. The bartending is top notch & the spirits manager will give you a tutorial on all things related to liquor quality, provenance, & the industry in general. These folks are experts at what they do. Definitely, a must go I'd you are in Mont Royal.
Not sure if Montreal has a huge happy hour scene, but the fact that you can get $5 pints on tap here is a steal in today's economy. Project Pilote is a fabulous green bar that functions as a mini brewery/distillery that also serves food during the kitchen's open hours. We had a variety of drinks to choose from & the staff there were very accommodating & helpful in picking out the best drafts. We ended up staying for an hour just relaxing after battling for fries next door, & I'd definitely go back again.
Pretty space. Service was friendly & efficient but not really attentive at all after the initial order. Shrimp toast was delicious, smash burger was typical, both overpriced for what they are though. They don't come with any sides by the way. Mint Julep inspired cocktail was strong & smooth, forgot the name though.
The food here was amazing! Would definitely recommend the burger!! Our server/bartender was amazing (sad we didn't get his name) he spoke 3 languages & was very attentive & knowledgeable, as it got busy he went to work more behind the bar & we had a waitress take over who also did a great job. Thank you for the great food & service - I will be recommending to friends & family that visit Montreal.
