My fiancé & I had the BEST experience here. A+ food, service, & atmosphere! We were visiting Montreal from Boston & spontaneously chose Projet Pilote for dinner (based on the reviews!) while we were a few blocks away at Quai des Brumes, after enjoying a wonderful folk duo's set. From the moment we walked in, it was such an enjoyable evening! We shared a fun laugh with the friendly host about how we speak English but we enjoy practicing French. Our server Ben was awesome! He made us feel so comfortable, like we were all friends right away! My cocktail, l'abricot melba, was unique in the best way. Our dishes, the striped bass & the Toulouse sausage, were both such delectable combinations of flavors. We appreciated the smaller portion sizes; it was the perfect amount of food! The sauces were so tasty that I joked to Ben I wanted something to soak up the leftover sauces on our plates & he offered to bring us bread. I said no thanks, but I actually should have said yes to the bread because the sauces were that good! We then made room for a mouthwatering chocolate mousse that we paired with a dessert wine. C'etait parfait!

Le dessert Projet Pillow est sublime! & surtout ne manquez pas la frite gourmande (aïoli, truffe & parmesan) - ce sont les meilleures frites que j'ai mangées! Le service était excellent 🙂.

I'll be honest - I had no intention of going to Le Projet Pilote, I didn't even know it existed. The original plan was to go to La Banquise for dinner, but upon arrival, we realized that the wait was an hour, so my friends I pivoted & decided to just go to the restaurant next door to La Banquise - which happened to be Le Projet Pilote, where I had THE. BEST. MEAL. OF. MY. ENTIRE. LIFE. I'm not exaggerating when I say that - truly everything we ordered was a total knockout. My friend ordered an old fashioned & said it was in her top three that she's ever had (which is an incredibly high honor). To eat, we ordered the mushroom toast, scallops, truffle parmesan fries & the gnocchi to share, & each dish was more spectacular than the last. I realized at Projet Pilote that I'd never truly experienced real gnocchi before-theirs was so incredibly light & pillowy, unlike anything I've ever had. The truffle parmesan fries were outstanding-easily the best I've ever had. Unlike other places that rely on drenching fries in low-quality truffle oil, these struck the perfect balance. They were beautifully crisp on the outside, tender on the inside, & the truffle flavor was present without being overpowering. The scallops were perfectly prepared, & although we were full after our dinner, we knew we just had to try the desserts. We ordered the strawberry shortcake dessert & I forget the name of the second dessert - but both were spectacular. The second dessert we ordered was a hundred layers of the most delicate paper-thin pear sheets, baked into a pie & served with homemade rum raisin ice cream on top - you could taste the rum in the ice cream! In summary, go here, order everything on the menu & spend the rest of your days dreaming about going back.

C'était très bon! Nous avions pris un plat d'hôte avec entrée, plat & dessert. Tout était frais & savoureux. Le service était excellent. Nous avons aussi choisi un testeur de rhums de plusieurs pays (Brésil, Réunion, Haïti) & avons apprécié que le serveur prenne le temps d'expliquer leur provenance ainsi que leurs notes.

Brasserie convivial où les serveurs & le barmaid sont très sympathiques. Les cocktails sont originaux & bons. Je vous conseille de tester les desserts & en particulier le gâteau au maïs qui est surprenant.

The entire experience from beginning to end was perfect. The staff here is incredible. The food is fresh & delicious. The beer they make is delicious. The gin they make is...delicious. Each staff member we spoke with spent time explaining some aspect of the food or drinks or process that they love. Get the burger. Get the dessert. Get the gin drink. Get whatever they are making.

On est aller un Lundi, on as pris le souper découverte & c'était le meilleur rapport qualité prix que jai vue a mlt. Salade de légumes cultivé sur le toit, 2 côtelettes d'agneau & un dessert pour 35$ (jai aussi pris le menu découverte alchool qui allait a merveille avec les plats) . Le menu changes chaque mois & jai bien l'intention dy retourner chaque premier lundi du mois. Le service était incroyable merci a Azure qui a été super a l'écoute de toutes mes questions & qui a vraiment ajouté a l'expérience avec sa gentillesse. Côté ambiance il y avais dla musique live toute douce style jazzy qui ajoutait une touche magique au décor & éclairage déjà super agréable dla place. Je recommende fortement!!
