About

La Carcasse focuses on the art of fire-grilled preparation, emphasizing high-quality cuts of beef and fresh seafood selections. The menu centers on robust, flame-kissed flavors achieved through specialized grilling techniques that enhance the natural profile of every ingredient. Patrons encounter a straightforward approach to protein-forward cuisine, where the charcoal sear defines the character of each steak and fish fillet. The setting prioritizes a functional atmosphere where the intensity of the open grill takes center stage. Sourcing emphasizes consistency, ensuring that each portion meets rigorous standards for texture and marbling. Every dish serves as a testament to the essential pairing of heat and raw ingredients, creating a focused experience for those seeking direct, unadorned preparations of classic meats and marine bounty.
