Great atmosphere in what is probably my favorite restaurant in Montreal. The onglet was a 15 on a 1-10 scale. The caesar salad was fantastic. Onion soup was awesome & comforting on this cold'ish autumn evening. The owner is in the kitchen as chef, & the waiter is such a wonderful guy who took good care of us, while we were there. We are looking forward to going here again soon.
On a assisté au cours de cuisine chez Gus ce mardi soir & on a eu une super belle expérience. Le chef & son équipe sont passionnants, drôles & très pédagogues. Me suis fait payer la totale au restaurant Gus (38, rue Beaubien Est) samedi soir dernier. Allez-y en courant avant que ça devienne impossible d'avoir une table. C'est excellent. Tout est savoureux, équilibré, varié, bien pensé & bien présenté. Portions généreuses pleines de goût. Petit resto de quartier charmant avec peu de tables & un comptoir (28 sièges seulement). Ambiance chaleureuse & intime. Service impeccable, pas trop familier, pas trop cérémonieux, juste agréable & simple. Il faut demander qu'on vous dicte le menu (pas de carte), mais ça vaut la peine d'être attentif, c'est comme une chanson qui se mange, images alléchantes, salivation assurée. Le chef, David Ferguson (anciennement aux fourneaux du Jolifou - resto rue Beaubien plus à l'est, 100 places), est assez flyé, bohème : en short, avec ses grosses bottes & son chapeau de brousse, derrière le bar, dans sa cuisine ouverte, jasant avec ses invités, souriant & sympathique. J'aime ce côté j'ai-l'air-de-rien-mais-je-sais-de-quoi-je-parle! Il est clairement amoureux de la bouffe & ça paraît. Il fait tout maison : son pain à la sauge ou au romarin?! (entk, il est dense & trop bon), ses vinaigrettes préparées à la commande, ses sauces piquantes, d'où ses origines du sud-ouest des États-Unis. Il a aussi étudié la cuisine française, ce qui donne des agencements assez uniques du genre : le nacho au fois gras. J'ai particulièrement aimé son entrée de calmars & de pieuvre marinée & grillée. Belle fraîcheur. Ses desserts sont juste fous : son moelleux au chocolat... hallucinant. Les cuissons sont parfaites & le dosage des piments aussi. Ne pas se fier qu'aux titres un peu simplistes de ses plats à l'ardoise. Devant vous & en vous, c'est une autre affaire. Je comprends mieux maintenant le pourquoi de l'enseigne avec un gros G qui pend à la porte d'entrée. Ce n'est pas juste en référence au nom du resto, Gus. C'est pas mal ce point que j'ai atteint samedi dernier! Émoticône wink Semble-t-il que son ardoise se renouvelle régulièrement. Pas surprenant pour un chef créatif. Bières internationales. Belle carte de vins. Même si ça été bière sans alcool pour moi, j'ai adoré. J'y retournerai bientôt... cette fois, ce sera au bar pour vivre de plus près la passion du chef & pour le voir à l'oeuvre. I love this restaurant! I've followed the chef David Ferguson since he owned Jolifou & I absolutely love his style of cooking. Rustic comfort food that tastes amazing! He knows what he's talking about when it comes to steaks too! I love the ambiance of the resto as well. Small & comforting. Great place to go! It's open kitchen makes for a great experience to get to talk to the chef too! Highly recommended!
