Unbelievable meal. 8 course tasting with 7 course wine pairing. This surpasses Daniel in NYC. The flavors & presentation were exquisite. The flavors innovative. The service impeccable. Somehow they have managed a fine technique in a comfortable & relaxing atmosphere. This foodie knows her food. Trust me.
Excellent experience with my spouse last week - we both raved about the cauliflower soup that was rich & super smooth. She had the hangar steak that was served rare (presumably sous vide) & I had the arctic char - excellent presentation & superb flavors. Highly recommend!

Our dinner was delightful. This was our first visit at the new location after many visits at the previous one. We were happy to see that the menu had many of our favorite dishes from the previous restaurant - specifically the eggplant & scallops (both pictured). The ambience of the new location certainly matches the food better than the old space did. The service was very attentive & warm. The sommelier recommended an excellent bottle of wine with our meal for my wife & I. Every plate was perfectly prepared & delicious. & the staff was even quick to change our table, at our request, when the neighboring table had a baby (who brings a 2 year old to a fine dinning restaurant for dinner?). All in all the meal & service was excellent. We look forward to our next visit back. Congratulations to Bouillon Bilk on the new location. We are very happy to have you back.
First, Uber still had the old location. Eventually made it to 22 Catherine but we wandered a bit trying to find a sign & building number. That's on us. But restaurant was not easy to find at night. We had the 8 course meal with wine pairing. It was enjoyable & food was great overall…main meat duck dish was a bit forgettable. Not my favorite. I typically love course meals & been to many Michelin rated places in the past. For some reason, the pace seemed a bit too slow? Even though I've had 3 hour course meals before. Don't know what it is. Anyway, overall, we enjoyed the meal. Can't quite give 5 stars due to reasons above.
Comme toujours : un délice ! Un incontournable de Montréal , un des meilleurs restaurant sans aucune hésitation. Un équilibre des saveurs parfait, proportions équilibrées, produits fins & frais.
We made reservations at Bouillon Bilk ln the same day on a weekday & we are so happy we went! The interior is dim so if you have poor eyesight, you might need to use your phone for it's brightness. The menu says 8 course is from 8pm onwards but we were told that because it's a weekday & not too busy, we could do the 8 courses. The appetizers were delicious & made us very excited for the mains. The cod was so good & flakey. It was cooked perfectly & the flavors were amazing. The lamb was my husband's favorite. The duck is duck breast & a duck heart. I've never seen duck heart served in a restaurant before so that was very interesting. It was actually more tender than the duck breast! The green apple dessert was tart & definitely a palate cleanser. The pear dessert's sorbet component was a big hit. It was light & full of pear flavor. We were celebrating our anniversary & Bouillon Bilk was kind enough to put candles on our dessert. The staff are very patient & kind. Highly recommend Bouillon Bilk!!
Bouillon Bilk a déjà été un magnifique restaurant gastronomique où chaque élément de l'assiette était travaillé délicatement & avec goût. Mon expérience d'hier soir se rapproche, au mieux, à un menu bistro. Comment servir sous l'appellation gastronomie un plat aussi mal présenté & avec si peu de soin (voir photo). Le porc était très bon mais quel manque de finition. Je me force plus à faire des carottes bouillies à la maison. Comment dit-on? C'est du garoché. Je crois que je vais dire adieu à cette adresse.
Toutes cuissons est à la perfection, les saveurs s'embrassent très bien. Le service est vraiment bon.

Our go to for fine dining in Montreal. We had the 8 course tasting menu with Canadian wine pairings. Some spectacular pairings with innovative food. Service is delightful-proper yet relaxed. Not something you can afford every day, but well worth it for that special date night.
Nous sommes retournés au Bouillon Bilk cette semaine dans leurs nouveaux locaux. La nourriture & le vin sont excellents. La présentation des plats est magnifique! Cependant, gros bémol au niveau du service. Nous étions assis au comptoir. La soirée était peu occupée. La maître d'hôtel était sur son cellulaire derrière l'ordinateur à l'entrée du restaurant. Les serveurs, peu occupés, se rejoignaient au bar pour parler des soins vétérinaires de leurs chats, leurs gyms favoris & de leurs plans pour le week-end. Étant assis au comptoir, nous avons été témoins de tout cela tout au long de la soirée... Cela est non professionnel, surtout venant d'un restaurant avec une telle réputation. Nous avons été vraiment déçus & cela a terni notre expérience.
Équipe soucieuse du détail. Aimable. Attention spéciale portée à mes intolérances alimentaires. Attention spéciale pour une personne a mobilité réduite. Super belle expérience.
New location is a let down. The food changed from the previous location. The food was overall lacking in flavours & missed the wow factor they used to have before with the modern french fusion. The most memorable dish was the duck with the extra foie gras (the extra is recommended), thought the duck was not tender which made the dish as a whole disappointing, the foie gras poêlé was a huge hit. The service was very slow while the place wasn't very full. They we're probably understaffed, we did notice that they grouped up often at the bar just to chit chat. Beside that, the waiters were very keen to details & helpful when you were able to get a hold of them. My experience at the restaurant took 2 hours & 30 mins, the 5 courses were served over the span of 2 hours. The atmosphere is very quiet & the decor is very modern, it gives out a very classy & delicate feels to it. Pre incident that forced the first location closed, this restaurant used to be in my top 3 restaurants in Montréal, unfortunately with the reopening, it fell down my list & I wouldn't recommend this place anymore.
Went to the restaurant for my friend's bday. The service was slow (5 courses). The 1st course which was trout gravlax was delicious. The other 4 courses were very bland & lacked personality. However, the foie gras served with the duck course was 5/5.
