Exceptional dining experience. I had the 5-course tasting menu, & every dish was excellent & full of flavor. The atmosphere is relaxed, & the service was absolutely top-notch. Highly recommended.

We decided to order à la carte so we could try more of the dishes we were actually interested in. Unfortunately, it was VERY disappointing. It felt like French cuisine by formula - polished on the surface, but without originality, intuition, or any real understanding of flavor.

The canapés were very unbalanced - each bite leaned heavily in one direction, either overly salty or overly acidic, without much harmony.

The veal tartare was probably the weakest dish of the night. It was extremely gamey, to the point where it was difficult to enjoy. The veal itself didn't feel well prepared - there was noticeable connective tissue in the tartare, which made the texture unpleasant. The sea urchin sauce didn't bring any sweetness or brininess you'd hope for; paired with the crème fraîche, it only amplified the gaminess instead of balancing it.

The crab was fine. Nothing particularly memorable, but not bad.

The scallops were also very average. We've definitely had better elsewhere. The garnish felt uninspired, & while the scallops themselves were cooked okay, the seasoning was lacking. Scallops are hard to completely miss, & these were edible, but not especially exciting.

The duck & lamb were where things became genuinely confusing.

The duck breast itself was cooked well - great temperature, nice texture - but it was paired with a salty miso sauce that completely weighed it down. It really felt like it needed something brighter or slightly sweet/acidic to lift it & bring out the richness of the duck.

The lamb came with a clementine sauce that leaned sweet & citrusy, which felt like a very strange match. Maybe the kitchen was going for something creative, but it just didn't work for us. Honestly, it felt like the sauces should have been swapped.

Service was friendly at first. Staff explained the menu & dishes when we sat down, which we appreciated. After the food arrived, though, it felt less attentive. We were asked once how everything was tasting once, & it felt more like a routine check since our server's attention was already drifting to other tables.

Several plates were left unfinished, & no one followed up or asked why. Maybe he was afraid to hear our thoughts, or he just simply doesn't care.

Pacing was also quite slow. We waited around 20 minutes for appetizers, then another 30 minutes before the first course arrived.

Overall, we left disappointed. There were a few decent elements here & there, but the execution felt inconsistent, some flavor pairings were genuinely confusing, & the pacing didn't help. For the price point, we expected much better.

8-course tasting was delicious start to end, no misses.

The beef tartare was a big surprise for me & my husband. The addition of clam & kimchi really made that memorable.

The duck, will be dreaming of it, love the addition of rhubarb, oh & that duck wonton!

The crab, the white asparagus - such great flavor pairings on the plate.

Highly recommend!

Bouillon Bilk is a true gem in Montreal. From the moment you walk in, you're struck by the sleek, understated atmosphere that puts all the focus on the food. Every dish is a surprise, with bold flavor combinations that somehow just work beautifully. It's both refined & comforting. The service is warm & attentive without being overbearing, which makes the whole experience even more enjoyable. It's the perfect spot for a special dinner or simply to treat yourself to some seriously good food. In short, a must-visit for any food lover in Montreal.

My group & I chose the à la carte option & ordered a variety of dishes, all of which were fantastic & full of flavor. The main courses-steak, scallops, & duck-were cooked perfectly & exceeded our expectations. The staff were extremely friendly & attentive, which made the experience even more enjoyable. We would absolutely return the next time we're in town.

Took my wife here for her birthday. Service & atmosphere were both great. We were excited to try the tasting menu with wine pairing but honestly found it underwhelming. My wife's a foodie & a bit picky; I'm not, & I'll eat just about anything, we both felt about half the dishes were just'meh.' Beautiful presentation, but the flavors didn't always land.

An Exceptional Culinary Journey Worth the Splurge

We recently had the pleasure of dining at a luxurious restaurant offering an eight-course tasting menu with wine pairings-& it was nothing short of extraordinary.

From start to finish, the service was impeccable: attentive, professional, & perfectly paced. Each dish was a revelation-thoughtfully crafted, beautifully presented, & bursting with creativity. The flavors were refined & surprising, with combinations that felt both daring & harmonious. It was clear that every plate was the result of meticulous work & culinary artistry.

Of course, such an experience comes at a high price. But for a special occasion, it was absolutely worth it. We left feeling delighted, inspired, & grateful for the experience. If you're looking to treat yourself or celebrate something meaningful, this is a place to remember.

I tried their 5 course menu so the review is based on this experience alone: the dessert was absolutely amazing, every flavor & different textures go great together & taste amazing alone. But the rest was just meh. To be fair the ingredients were good & the chef put thought into the dishes. However the taste was just not as impressive. Not my cup of tea. Except from the dessert. If I ever go back it's definitely because of the dessert. (Btw the restaurant is very low key & is a bit hard to find if you use google map. I suggest don't go further since there was a crazy person harassing every passersby in the crossing nearby.)

We did 8-course tasting menu & were not impressed. The meals are somehow dull although the ingredients are interesting. Their younger brother Cadet does a better job at offering a palette of unique flavors.

We don't eat dessert & they were graceful enough to remove the respective items from the menu. Thanks for being flexible!

First two trips were 5 stars & the third one about 3. The new dishes (fish over gnocchi & veal) were disappointing. Too much salt & sauce but not flavorful at all. The dish for the veal was cold so the food got cold quite quickly. They wanted to remake it but we were already quite full after a couple of bites. Got a dessert for free for the disappointing experience. Though I had hoped I ordered our usual choices instead.

Edit: our 4th trip was pretty good (though I didn't like the ravioli as much. The lobster vol-len-vaut dish was very very good, not sure that was the right spelling though).

Edit: our 5th (& certainly the last) trip was a disaster. The vol-ent-vaut was cold, scallop had about twice the amount of salt compared to previous times. I asked them to redo the first dish but not the second, already too tired to wait. Really really bad food this time. I think on average this place deserves at most 3.5/5. More like 3.

We booked a table ahead. We were a group of three.

We all ordered the 8 course tasting menu. I also ordered the 7 discovery pairings. The 8 course tasting menu was supposed to be for people who came after 8pm but they made it available for us even though we were there quite early (5.30pm).

Absolutely loved each course! They all have rich flavors. The mushrooms were really tasty, with the right amount of crispy. Among the first five courses, scallop & quail were my favorite. For dessert, the cucumber ice cream was really refreshing. Definitely recommend! For the discovery tasting, I love the last ice cider the best. Fruity flavor but not too sweet. Perfect balance

Here is a very decent option if you want to try different tastes!
Their dishes offer a creative mixture of flavors for the customer to enjoy!
I ordered the Rabit Pasta & it was delicious! Pleasant combination of flavors.

Staff are very nice & professional & they explain everything to you.

They have a wide variety of wines & cocktails.

& the atmosphere is very modern & nice.

Had a great time with my family here. I had the tasting menu with wine pairings it was incredible! Amazing flavors & textures. Every dish I had was great. I highly recommend it. it is expensive but you get what you pay for.

This restaurant offers more than just a meal, it is an experience catered by professionalism & care. Meals are given special attention & thought in their design & presentation. Regardless if you appreciate the flavors presented to you it is a feast for all the senses. From the waiting staff making you feel welcome & at home to a cozy atmosphere, there is not much I would change from dining here. Most certainly recommend for a unique outing!

Unbelievable meal. 8 course tasting with 7 course wine pairing. This surpasses Daniel in NYC. The flavors & presentation were exquisite. The flavors innovative. The service impeccable. Somehow they have managed a fine technique in a comfortable & relaxing atmosphere. This foodie knows her food. Trust me.

Excellent experience with my spouse last week - we both raved about the cauliflower soup that was rich & super smooth. She had the hangar steak that was served rare (presumably sous vide) & I had the arctic char - excellent presentation & superb flavors. Highly recommend!

We made reservations at Bouillon Bilk ln the same day on a weekday & we are so happy we went! The interior is dim so if you have poor eyesight, you might need to use your phone for it's brightness. The menu says 8 course is from 8pm onwards but we were told that because it's a weekday & not too busy, we could do the 8 courses. The appetizers were delicious & made us very excited for the mains. The cod was so good & flakey. It was cooked perfectly & the flavors were amazing. The lamb was my husband's favorite. The duck is duck breast & a duck heart. I've never seen duck heart served in a restaurant before so that was very interesting. It was actually more tender than the duck breast! The green apple dessert was tart & definitely a palate cleanser. The pear dessert's sorbet component was a big hit. It was light & full of pear flavor. We were celebrating our anniversary & Bouillon Bilk was kind enough to put candles on our dessert. The staff are very patient & kind. Highly recommend Bouillon Bilk!!
