Started with the Umami Tsunami, clever name, nice East Asian inspired martini in a unique long stem glass.
Bread was cold, not even room temperature, more fresh out of the fridge. It was good quality though.
I had the veal tartare with sea urchin to start. It was tasty with the little cracker on top but pretty salty.
My friend had the sashimi with the shrimp crackers. I'm not a fan of grapefruit so I can't judge but my friend liked it.
I enjoyed my escargot ravioli, but still a little hard on the salt.
My friend was a little disappointed in his duck dish. Though the flavour was there, the Bao bun was charged & had no vegetables to balance it, the sausage was incredibly salty, the magret was a little tough.
We liked our server, she gave me a nice wine recommendation & explained a couple of things on the menu, but the menu was so basic that we didn't know what we were ordering because each description was just a list 4 ingredients & we shouldn't have to ask about each dish.
Mignardises were a nice & varied selection to finish.
Espresso Martini was simple & basic, nothing wrong just don't expect a signature twist or even a coffee bean accent.
Pretty place, unassuming from the outside. Not sure why they leave a portion of the curtain open so I can see the big neon fast food sign across the street.
Incredible experience! The food & wine pairing was next level. We dined at the bar & loved talking to the staff, who were incredibly kind & fun!
Great restaurant! My partner & I went here for the 5 course tasting menu & I can honestly say it is some of the best food I have ever had!
You can tell the chefs really put a lot of thought into the composition of the dishes & the order in which you eat them. All the flavours & aromas blend together seamlessly & the quality of the ingredients could be tasted.
My one slight criticism is that the restaurant itself is not as interesting as the menu. It's just a basic dining hall with simple tables & a simple modern setup. However, definitely don't miss out on the food just because of this!
The servers were also so on top of it. We never poured ourselves wine from our bottle once. They were always attending to us & explaining each dish.

We had the five course tasting menu with the Canadian wine pairings & it was, quite frankly, the most delicious meal I've had in Montreal. I was so impressed at the flavour & quality of every dish, each presented so elegantly without being over the top or gimmicky. Service was outstanding in every way. We specifically want to shout out our sommelier, who did such a stunning job with the wine pairings. This spot is NOT to be missed. I already look forward to returning! Thank you to Bouillon Bilk for an unforgettable anniversary dinner!
I've been there 5 times, their old location & the new one. Always excellent, they favor ingredients from the province of Quebec… & it's wonderful, as the province has an amazing selection of great products. Their course menus are both inventive & festive. Great wine list, better than many 1 or 2 stars Michelin restaurants, very good service & sommelier - overall a wonderful experience , well priced.
A bit chamouflage on the outside, inside its a lovely restaurant with nice lights hanging from an atrium ceiling & soft light at table level. The food is layered & well thought out. Tasting menu definitely worth it. Terrific wine list too. The staff were very accommodating to suit individual preferences.
Took my wife here for her birthday. Service & atmosphere were both great. We were excited to try the tasting menu with wine pairing but honestly found it underwhelming. My wife's a foodie & a bit picky; I'm not, & I'll eat just about anything, we both felt about half the dishes were just'meh.' Beautiful presentation, but the flavors didn't always land.
An Exceptional Culinary Journey Worth the Splurge
We recently had the pleasure of dining at a luxurious restaurant offering an eight-course tasting menu with wine pairings-& it was nothing short of extraordinary.
From start to finish, the service was impeccable: attentive, professional, & perfectly paced. Each dish was a revelation-thoughtfully crafted, beautifully presented, & bursting with creativity. The flavors were refined & surprising, with combinations that felt both daring & harmonious. It was clear that every plate was the result of meticulous work & culinary artistry.
Of course, such an experience comes at a high price. But for a special occasion, it was absolutely worth it. We left feeling delighted, inspired, & grateful for the experience. If you're looking to treat yourself or celebrate something meaningful, this is a place to remember.
Good food, but really nothing incredible considering price & size of portions (especially size of wine glass at 17$). Unfortunately, since the restaurant changed adress, it is now located in a tougher section of the redlight, & there are lots of homeless people outside…
It's a very special experience with a chef that have tried the best combination of ingredients for an amazing dinner
The dessert: chocolate mushroom was amazing specially combined with poire liquor
The wine collection has tens of pages & we got a 2016 Margaux at very good price

I order the tasting menu with 8 courses pairing with 5 glasses of Canadian wine( they called discovery ). During the 2.5 hours of dining I never get disappointed & bored but just enjoy the fun to explore the design of food.
The service stands out as one of the best in this trip.
An exceptional dining experience that far exceeded our expectations. Every plate was thoughtfully composed with meticulous attention to detail. The non-alcoholic beverage options are outstanding for those who prefer to abstain, & the wine pairings are perfectly curated to complement the meal.
The eight-course menu was absolutely delicious. Our regret was not starting with the wine pairing from the beginning. Halfway through, we realised the food was so good that it would have been a shame to have it without wine, so we added the pairing then. The wines themselves were not particularly outstanding tho. Additionally, there was a performance outside that was a bit too loud, which slightly disrupted the otherwise wonderful experience.
What a great experience. The food, wine & service were all amazing. We had the five course meal with the wine pairing. Everything was amazing. We especially loved the foie gras & the quail. The wines were all perfectly paired & very tasty.
Pricy but worth it. If you want to have a gourmet experience that's the place to go, get the 5 or 8 course meal with agood bottle of wine. Excellent for special occasions, first dates or any occasion where you want to impress. The service is very attentive & the food is heavenly. I strongly recommend!
Comparing with other experience around the world with the same price range, the food is subpar from what you would expect. The gastronomic experience is not impressive (taste & visuals). You would make your own ambiance with your friends rather than the place making it for you. About 350$ for 2 persons having 5 services + some wine. One last thing I was sick after the meal & my partner was bloated...
A truly unforgettable experience! Credit to the front of house & kitchen teams alike. Party of 5 adults eating the 5 & 8 course tasting menus, with discovery & traditional wine pairings. Each course was delicious & well presented. Staff were extremely welcoming & knowledgeable about dishes/ingredients/wines. The atmosphere was classy. Some of the wine pairings were, shall we say, adventurous! Well done Buillon Bilk, we look forward to dining with you again!
I dined here on Sunday, May 25th during a recent visit to Montreal. I thought the food was executed very well. Almost perfect. Would have like to have seen a little more creativity & pushing the envelope, but there's never anything wrong with keeping it simple & executing it perfectly. I just wasn't really wowed by anything I had...apart from the foams & broths. The front of house service however, leaves VERY little to be desired. There were multiple times between courses where my guest & I were waiting for silverware as our food sat on the table. Also I had gotten up to use the bathroom & expected to find my napkin folded over my chair like most fine dining establishments, that was not the case. & in the most infuriating example, when my guest was looking for a white wine & wanted the white burgundy, the server repeated said that was more expensive. I'm having an 8 course tasting, I know how much the wine is, & I don't care. I've dined in many fine dining establishments, for work, academia, & pleasure. All-in-all, I think the food is great, but everything else is mid...I don't think I'll be returning, nor will I suggest this place to anyone else.
Here is a very decent option if you want to try different tastes!

Staff are very nice & professional & they explain everything to you.
They have a wide variety of wines & cocktails.
& the atmosphere is very modern & nice.
Delicious dishes served by very competent, friendly & professional staff. Wide ranging wine menu with knowledgable sommelier. The scallops are a must. The tasting menu is adapted to dietary restrictions. Highly recommend.
