We decided to order à la carte so we could try more of the dishes we were actually interested in. Unfortunately, it was VERY disappointing. It felt like French cuisine by formula - polished on the surface, but without originality, intuition, or any real understanding of flavor.
The canapés were very unbalanced - each bite leaned heavily in one direction, either overly salty or overly acidic, without much harmony.
The veal tartare was probably the weakest dish of the night. It was extremely gamey, to the point where it was difficult to enjoy. The veal itself didn't feel well prepared - there was noticeable connective tissue in the tartare, which made the texture unpleasant. The sea urchin sauce didn't bring any sweetness or brininess you'd hope for; paired with the crème fraîche, it only amplified the gaminess instead of balancing it.
The crab was fine. Nothing particularly memorable, but not bad.
The scallops were also very average. We've definitely had better elsewhere. The garnish felt uninspired, & while the scallops themselves were cooked okay, the seasoning was lacking. Scallops are hard to completely miss, & these were edible, but not especially exciting.
The duck & lamb were where things became genuinely confusing.
The duck breast itself was cooked well - great temperature, nice texture - but it was paired with a salty miso sauce that completely weighed it down. It really felt like it needed something brighter or slightly sweet/acidic to lift it & bring out the richness of the duck.
The lamb came with a clementine sauce that leaned sweet & citrusy, which felt like a very strange match. Maybe the kitchen was going for something creative, but it just didn't work for us. Honestly, it felt like the sauces should have been swapped.
Service was friendly at first. Staff explained the menu & dishes when we sat down, which we appreciated. After the food arrived, though, it felt less attentive. We were asked once how everything was tasting once, & it felt more like a routine check since our server's attention was already drifting to other tables.
Several plates were left unfinished, & no one followed up or asked why. Maybe he was afraid to hear our thoughts, or he just simply doesn't care.
Pacing was also quite slow. We waited around 20 minutes for appetizers, then another 30 minutes before the first course arrived.
Overall, we left disappointed. There were a few decent elements here & there, but the execution felt inconsistent, some flavor pairings were genuinely confusing, & the pacing didn't help. For the price point, we expected much better.
8-course tasting was delicious start to end, no misses.
The beef tartare was a big surprise for me & my husband. The addition of clam & kimchi really made that memorable.
The duck, will be dreaming of it, love the addition of rhubarb, oh & that duck wonton!
The crab, the white asparagus - such great flavor pairings on the plate.
Highly recommend!

Mérite une étoile Michelin à mon avis. La bouffe est extraordinaire avec le pairing de vin est fantastique! Que dire du service? Impeccable! Atmosphère est incroyable! J'ai mangé dans plusieurs restaurants étoilés de Michelin …. alors c'est les mêmes standards!

Excellent tasting menu with well balanced flavours. Dishes were elegant, light & refreshing. This was probably my favourite restaurant I tried in Montreal & one of the few where the sauces on the food were not too salty! The cocktails were excellent as well. They also have a non-alcoholic drink pairing with the tasting menu which sounded very good, but I did not try it. Highly recommend.
Incredible experience! The food & wine pairing was next level. We dined at the bar & loved talking to the staff, who were incredibly kind & fun!
We had the five course tasting menu with the Canadian wine pairings & it was, quite frankly, the most delicious meal I've had in Montreal. I was so impressed at the flavour & quality of every dish, each presented so elegantly without being over the top or gimmicky. Service was outstanding in every way. We specifically want to shout out our sommelier, who did such a stunning job with the wine pairings. This spot is NOT to be missed. I already look forward to returning! Thank you to Bouillon Bilk for an unforgettable anniversary dinner!
Took my wife here for her birthday. Service & atmosphere were both great. We were excited to try the tasting menu with wine pairing but honestly found it underwhelming. My wife's a foodie & a bit picky; I'm not, & I'll eat just about anything, we both felt about half the dishes were just'meh.' Beautiful presentation, but the flavors didn't always land.
An Exceptional Culinary Journey Worth the Splurge
We recently had the pleasure of dining at a luxurious restaurant offering an eight-course tasting menu with wine pairings-& it was nothing short of extraordinary.
From start to finish, the service was impeccable: attentive, professional, & perfectly paced. Each dish was a revelation-thoughtfully crafted, beautifully presented, & bursting with creativity. The flavors were refined & surprising, with combinations that felt both daring & harmonious. It was clear that every plate was the result of meticulous work & culinary artistry.
Of course, such an experience comes at a high price. But for a special occasion, it was absolutely worth it. We left feeling delighted, inspired, & grateful for the experience. If you're looking to treat yourself or celebrate something meaningful, this is a place to remember.

At one point, the waiter forgot to bring the first drink pairing with a course, but he quickly stepped aside & asked the bartender to create an entirely new drink to accompany one of our sides. They were very transparent with us, explaining that it was something experimental & even reassuring us that if we didn't like it, they would make us another. I really appreciated that level of creativity & open communication. The food itself was excellent, & overall, it was a wonderful experience that was absolutely worth the price.
