Bouillon Albert was born out of a passion for convivial cuisine and a desire to recreate the warm atmosphere of Parisian bouillons. We draw inspiration from the simplicity and authenticity of French dining, while adding a modern, local touch, reflecting the diversity of the Plateau Mont-Royal.
Bouillon Albert delivers classic French bistro fare at very reasonable prices, with a warm, convivial atmosphere that many guests call authentic and comforting. Dishes like bone marrow, escargots, beef tartare, onglet with green sauce, ravioli, canard confit, and millefeuille or rice pudding and profiteroles frequently appear as highlights, and the wine list and cocktails are noted as good value. Service is described as friendly and attentive on many visits, though some experiences mention slow or uneven service, wait times, and a few missteps such as forgotten appetizers or seating near doors that let in cold air. The vibe ranges from bar seating to intimate tables, and overall guests feel the restaurant offers a genuine Parisian bouillon experience with generous portions and strong flavors, many planning to return to try more dishes.
Atmosphere, service, decoration, everything was nice & perfect. The issue was the food…We almost ordered every item from the menu (see photos). Lobster bisque & onion soup were too salty, beef tartare didn't taste anything, all the fish (aile de raie & truite a l'oseille) were cook in probably a brick of butter (way too much), the maquereau au vin blanc was tasteless, fries were not even as good as McDonalds fries & the mayo was sour. The mille feuille dessert is really bad, the cream tasted like a diluted herb & milk mixture…The profiteroles au chocolat & creme caramel were good…It was very disappointing & the bill was 515$. However, the staff were very nice & professional.

Had a beautiful time, went for my birthday but said it was my friend's birthday to avoid the awkwardness. The gentleman at bar brought us a dessert & sang which was really kind. The food was fantastic, especially the os a moelle & steak fries. The mayonnaise was a bit too acidic though but rest was impeccable 🙌🏾

We visited in September, 2025. We had a reservation & they had us waiting 20 minutes. Then they forgot about us & left 4 of us to share 2 cups of water for half an hour. Also they don't believe in ketchup?
But the FOOD?? The food was delicious. I've never wiped my plate so clean. The bone marrow? Elegant. The steak? Rarer than I asked but delicious. The soup??? Divine. The fish??? Damn near licking the plate at the end.
& the rice pudding??? A must have. We wanted to go back the next day & ask for pudding to-go but had to catch a train.
Had dinner here tonight as a celebration for my sisters birthday. Had to ask for water (twice), & waited too long to be asked for a drink order. One of our appetizers never came, & when we asked our server'Rim' she immediately denied us ordering it despite effusing about said app when we ordered. The service worsened from there, culminating in her avoiding our table entirely, despite spending plenty of time at neighboring tables. We were excited to try this restaurant that seemed well attended & full of charm, but after receiving this service I can't recommend this restaurant & won't return. Wouldn't advise servers to hover over guests while paying either - seems like a cheap attempt at intimidation. Compliments to the runners, host, & bus staff who were attentive & lovely. Price was good too but did not make up for the service.
