If you blindfolded me, sat me down at Bouillon Albert, & told me I was in the 11th arrondissement of Paris-I'd believe you.
I've eaten at some of the most iconic bistros across France, & somehow, this spot in Montreal holds its own… no, surpasses many of them.

We tried everything on the menu. Every single dish. Not out of gluttony, but because it felt like a sin to stop. The escargots? Textbook perfect-garlicky, buttery, with just the right bite. The fish soup? Transported me straight to Marseille. The cassoulet? Rich, comforting, layered. Even the rotisserie chicken was so deeply seasoned & tender it felt like it had a story to tell.

The mille-feuille with verbena? I'd fly back to Montreal just for that.
Profiteroles with hot chocolate sauce? Criminally good.

The room feels alive-warm lighting, the open kitchen, the casual elegance. You're not just eating here, you're having a full-on cinematic French dining experience.

This isn't a trendy reimagining of French cuisine-it's the real deal, with love, guts, & soul behind every dish. Bouillon Albert is an instant classic. I'll be dreaming about this place until I return-& trust me, I will.

Overall: 7/10
Food: 7.5/10
Service: 6/10
Atmosphere: 6/10

We visited in mid-March 2025 as a group of four. We had made a reservation a week in advance, but upon arrival, we were seated at a table right in front of the door. When we asked if we could switch tables, the staff was unaccommodating, despite three empty tables being available. This negatively impacted both the service & atmosphere, as every time the door opened, it felt like we were sitting in a refrigerator. That said, we did appreciate the staff's efforts to keep the door closed to minimize the cold. As a suggestion, installing a space heater or raising the height of the divider could help improve the experience.

For food, we started with the soup as an entrée, but it was disappointing-it reminded us of canned Campbell's chicken noodle soup. We wouldn't recommend it. The bread was also underwhelming.

For mains, we ordered the duck, which was decent, the ravioli, which ended up being one of our favorites, & the bouchée à la reine, which was quite good. The rest was pretty average.

Since we were still hungry by dessert, we decided to order one of everything. Out of the five desserts, the profiteroles were the standout. The millefeuille & crème caramel, however, were pretty forgettable.

Overall, while the food had some highlights-especially the ravioli & profiteroles-the experience was let down by poor seating, unaccommodating service, & an underwhelming starter. If you're in the area, it's worth a try, but with a 7/10, there are likely better options.

Amazing experience, firstly the restaurants is beautifully styled. The service was immaculate, attentive & friendly. The food was the star of the show, we had the bone marrow (wow), escargot. Second service beef tartare with the Russian style eggs. Main course the duck confit (insane) & to finish the profiterole & the crème brûlée. Paired it with the 2023 Chardonnay! New favourite restaurant in Montreal. Amazing prices! Memorable experience!

They even packed up the bones, from the bone marrow for our dog! 🫶🏼

Excellent.
