Best rib steak I've ever had !!! Get the dry aged one !!! Also, their Diane sauce is EXQUISITE !!! I wanted to take some home !! Amazing eats. Highly recommend 😋😋😋
Updated visit. Came second time. Had ribeye, porterhouse, fois gras, tar tar. All were excellent. Sides were also very good. Place was busy & server working hard.

I've been to Vargas a few times over the years & I always find the steaks to be hit or miss. It's hard to knock a place for the steak not being tender & when I've told them about it they've always made something new. Unfortunately it's been 4 out of the 5 times I've gone that someone in our group has had a bad steak. Most recently I had the prime rib which was surprisingly very tough but they replaced it with a filet & a free dessert. The crème Brûlée was probably the best I've ever had. I was there with my son & he got the burger. For kids they charge you 12$ which is nice but it's the same burger on their menu minus the bacon. My son & I both agreed it's probably the best burger I've ever had in my life. It was really good but it was a tad spicy so if that's your thing you'll love it.
Pour une côte de boeuf rôtie pas cher, il n'y a littéralement pas mieux que la table d'hôte de Vargas à midi en semaine. $30 pour un Prime Rib, une salade, de la purée de pomme de terre & un café (à midi en semaine), c'est l'une des meilleure valeur du centre-ville. Surtout que la côte de boeuf est vraiment excellente. Le service est je trouve par moment prétentieux cependant.
We had family visiting from Florida & they wanted steak dinner. We used to go to Moishe's before it was sold. It appears to have been bought by a Conglomerate which is akin to Loblaws buying L'Express on St. Denis...they actually moved this iconic restaurant to the Biz district of Montreal. C'mon, the ambiance & history were part of the attraction. Not to mention the prime cuts of beef & Yiddish menu. Vargas appealed as an option. The Service was impeccable for our table of 6. They had a small but excellent wine list. The decor was spacious, the coffered ceilings were high, with lots of Art Deco finishes, plus views of the Mtl skyline. I loved the touch of specialty bottled & well chilled H2O. I shared the Mediterranean Salad, it was big enough for 4. I'd love to know where they sourced such luscious tomatoes in February. The sprinkling of dried grapes offered an nice crispy texture to the juicy tomatoes, & it was a nice fresh appetizer to contrast with the main course of Ribeye I chose. The others had Onion Soup which tasted sweet & everyone finished to the last drop. Everyone enjoyed their choice of Sirloin, which was very tasty. No one actually used the different sauces on the side, as the steaks did not need any accompaniment. My only complaint is that my steak was medium rare & not rare as I chose, & was lukewarm on arrival. The desserts were absolutely divine. I shared the Chocolate souffle with dark thick chocolate syrup & the most heavenly ice-cream, surely home-made. I am not a fan of overly sweet desserts, & Vargas did not disappoint in that regard. We had polite, attentive & discreet service throughout.I took one star off due to the lukewarm steak - but this would not prevent me from visiting this lovely & elegant restaurant in the future.
Bone-in Rib eye & Rip cap steaks were amazing. Sides were equally great. Sushi was fresh too. Staff was amazing & very attentive. Great vibe with chill & upscal decor. Would definitely come here again. They were also able to accommodate our well behaved toddler!
A little disappointed with the food this evening…. Drink was mid, side was excellent but the steak itself (ribeye) was upsetting for the price we payed for…. But our waitress Emy was a delight !
My wife & I celebrated our 40th wedding anniversary by having dinner at Vargas. It was absolutely amazing. My wife had the prime rib, which was done to perfection, accompanied by the garlic mashed potatoes. She absolutely enjoyed it! I had the Beef Wellington. It was also amazing! I also had the lobster mashed potatoes, & oh my goodness, they were brilliant! We followed up our meal with the strawberry cheesecake. Wow, it too was amazing!! Our waitress/bartender Amy was very friendly & extremely professional. She is a great conservationalist & wise beyond her years! You are very lucky to have such an amazing employee. Bravo!
Waitress was amazing! She had to do it all at the bar & tables & took great care of us. Prime rib could be better & sea bass was a bit salty. Foies gra was great as well as beef tartare. Oysters were amazing as well.
Always a safe bet. Great wine selection & the rack of lamb is good, not Rib n Reef good, but good
Reserved a table for a party of 4, upon arrival he maîtresses d' seemed oddly unwelcoming but we were quickly seated. Waiter was attentive/prompt but he mumbled & was very hard to hear & understand at times. Though the support staff & floor manager were very helpful. Food was amazing! My partner & I both got tenderloin & shared three side, which were all fantastic. Our friend got the salmon, which was very generous & "grilled to perfection", & the prime rib... They didn't describe it much as they were too keen on devouring it. Everything was perfect! Beautifully prepared & very generous proportions.
The bone-in rib cap steak is a unique find at steakhouses. It was delicious & fired beautifully. I enjoyed with the seasonal vegetables & cocktail while seated at the bar. I recommend & will return to try other menu items.
3e fois au Vargas, probablement la derniere. J'y ai ete mieux servi lorsque j'y ai depense entre 200 a 300$ au lieu de 600 a 700$. La qualite de la nourriture est toujours presente, mais si le service client compte pour vous & que vous n'etes pas un habitue evitez cette place. Avoir ete au Farside, au Deville, au Mirella's ou a la limite meme au Rib&Reef nous aurions ete mieux servis qu'ici. Go where your money is appreciated. Point blank. Au moins ma chienne aura un bon reste de moelle oeuse a deguster comme collation.
Decor & atmosphere nice. Service was A+. Prime rib was good but not the best I ever had. Prices are very reasonable for a downtown higher end restaurant. 28$ for table d'hôte, I consider this value for downtown. Will definitely go back
Food - their Lamb shanks, BBQ ribs, salmon plate are great. Tried their sushi for the first time, not bad at all. Onion soup is delicious with the old gruyere cheese. Cesar salad never disappoints. Their portion size varies from one dish to another. Service- nothing to complain about. Always good. Atmosphere- if you want a quiter ambience, do not sit near the bar. Otherwise, the ambience is great.
The steak was amazing. Rib eye fry aged 28 days to perfection. The sushi on the other hand was lacking, & probably not even on par with your typical all you can eat joint. The service was great, but it seemed like a restaurant made more for business meetings than to celebrate special occasions. Overall, if you are looking for great cocktails & steaks, would recommend.
I had a 90 day dry aged rib eye, it was cooked perfect. I had the bone marrow & whisky sauce to dip & it was delicious
