Vargas, c’est Mike Digaletos, passionné et fin connaisseur en sommellerie et Stefano Apostolatos, homme d’affaires aguerri, qui sont parties prenantes de toutes les décisions depuis le tout début. C’est une grande fierté que l’entreprise soit opérée par la même famille depuis presque deux décennies.
Vargas est perçu comme une adresse de qualité offrant une palette variée allant des steaks et viandes maturées tels que ribeye, filet mignon, tomahawk et prime rib, à des plats de fruits de mer et des sushis, avec des desserts soignés et des sauces appréciées; l'ambiance et la présentation des plats sont souvent soulignées comme exceptionnelles et le cadre est décrit comme chaleureux et élégant, parfois animé avec une rénovation du bar rappelant un grand restaurant de New York; le service est généralement apprécié pour son professionnalisme et sa convivialité, mais des observations ponctuelles sur la lenteur ou des erreurs de plats existent, compensées par des serveurs attentifs et des conseils avisés; les portions et la qualité des ingrédients sont louées et les menus du midi ou les offres table d'hôte sont vus comme de bonnes valeurs, même si certains commentaires signalent un rapport qualité-prix variable selon les plats et l'occasion; dans l'ensemble Vargas apparaît comme une destination fiable pour des dîners importants et des repas d'affaires, avec une offre attrayante et une expérience de salle à manger qui peut être mémorable.
Delicious food & good service. I work nearby & I went to this place with some collegues for a business meeting. The staff greeted us & took care of all my business partners. We ordered a nice steak & had a good evening of business deals. The atmosphere is quiet & relaxed. Easy to have a conversation. The food was tasty & the service was friendly. Thank you for the hospitality.
Dinner for 5. Service=good overall but waited quite a while for waiter/water. Also, food runners brought wrong dishes to wrong people twice. Waiter (Pascal) was friendly, fun & funny.
Food: Bread rolls were good but some were not that fresh. Grilled octopus app was good but not great & had a weird orange sauce. Definitely not worth $30. French onion soup was not hot & the cheese barely melted=someone took it out of the oven way too early. Sent it back & 2nd time around it was hot & melted & broth quite tasty. $12 grilled veggies that we chose as sides with steaks were a let down. Burger de Dave (topped with aged cheddar, maple-glazed bacon, lettuce, tomatoes, onions, pickles & chipotle aioli. Served with golden fries. ) was good but a bit messy because of the aioli, & the meat is not well seasoned. Filet mignon was very good, as was the Miso glazed salmon. Overall a good meal but not great bang for your buck at around $70 per person without booze. Keg offers better overall food & value.

I am visiting from Toronto & met a couple Montréal friends for lunch. The lunch menu is a GREAT deal! I had the Chef Special, a tasty tender meaty lamb shank, for only $26. & a glass of Douro red for $12. Our waiter Yannick was very friendly & helpful. Would highly recommend Vargas for weekday lunches.
The food was delicious. I had the 8oz filet mignon with peppercorn sauce. It was cooked just right, & it was tender & very tasty. My wife had the organic salmon meal with deep-fried cauliflower. The salmon was fresh & cooked just right with a delicious mango sauce. Personally, I don't like anything deep-fried. Perhaps, the chef should consider another method to cooking the cauliflower. My friend had the roast beef. Unfortunately, it was not tender. The roast beef should be almost melt-in-mouth tender, & could have had more spice… Otherwise, I would definitely recommend this restaurant. Our waiter Christo, was very friendly, knowledgeable, professional, attentive.
The food here is just ok I feel but Ive always been very satisfied with the service & even though the food is just ok i must say i keep going back for the sushi pizza which actually looks nothing like a pizza 😂 it looks like a butterfly on some days & tear drops on another day. I do recommend trying it though it is sooooo tasty.
We had family visiting from Florida & they wanted steak dinner. We used to go to Moishe's before it was sold. It appears to have been bought by a Conglomerate which is akin to Loblaws buying L'Express on St. Denis...they actually moved this iconic restaurant to the Biz district of Montreal. C'mon, the ambiance & history were part of the attraction. Not to mention the prime cuts of beef & Yiddish menu. Vargas appealed as an option. The Service was impeccable for our table of 6. They had a small but excellent wine list. The decor was spacious, the coffered ceilings were high, with lots of Art Deco finishes, plus views of the Mtl skyline. I loved the touch of specialty bottled & well chilled H2O. I shared the Mediterranean Salad, it was big enough for 4. I'd love to know where they sourced such luscious tomatoes in February. The sprinkling of dried grapes offered an nice crispy texture to the juicy tomatoes, & it was a nice fresh appetizer to contrast with the main course of Ribeye I chose. The others had Onion Soup which tasted sweet & everyone finished to the last drop. Everyone enjoyed their choice of Sirloin, which was very tasty. No one actually used the different sauces on the side, as the steaks did not need any accompaniment. My only complaint is that my steak was medium rare & not rare as I chose, & was lukewarm on arrival. The desserts were absolutely divine. I shared the Chocolate souffle with dark thick chocolate syrup & the most heavenly ice-cream, surely home-made. I am not a fan of overly sweet desserts, & Vargas did not disappoint in that regard. We had polite, attentive & discreet service throughout.I took one star off due to the lukewarm steak - but this would not prevent me from visiting this lovely & elegant restaurant in the future.
I attended a cocktail hour here during a business trip. The food was delicious. Every hors d'oeuvre tasted so good. The space was great for chatting. The decor & ambiance was excellent. The lamb was so tasty. Recommended for business functions as well as a fine dining outing.

Had a nice meal, steak was tasty & sushi was well prepared. Our server, Pascal, was awesome! Very friendly, great recommendations, & just a really cool guy. The restaurant is undergoing renovations to make it look more modern, which will help with the atmosphere. All in all, we had a great time & the food was very good.
Nice restaurant that I thought was in the Fairmont hotel but actually right next to it. I had the Walleye filet fish which was very flavorful along with the rice & veggies. My friend had the salmon that looked delicious as well & his plate was empty afterwards. The staff was nice but I felt like our waiter didn't introduce himself to us. It was my birthday which i noted on the reservation, but not acknowledged in any way. Tasty bread & drinks.
Vargas is not what it used to be! Drinks are whatever, the food is not what it used to be. Food used to be so delicious & tasty now it's not the case. Very disappointed specially for the price it cost. The french onion soup was too cheesy & did not taste good.
