Dinner for 5. Service=good overall but waited quite a while for waiter/water. Also, food runners brought wrong dishes to wrong people twice. Waiter (Pascal) was friendly, fun & funny.
Food: Bread rolls were good but some were not that fresh. Grilled octopus app was good but not great & had a weird orange sauce. Definitely not worth $30. French onion soup was not hot & the cheese barely melted=someone took it out of the oven way too early. Sent it back & 2nd time around it was hot & melted & broth quite tasty. $12 grilled veggies that we chose as sides with steaks were a let down. Burger de Dave (topped with aged cheddar, maple-glazed bacon, lettuce, tomatoes, onions, pickles & chipotle aioli. Served with golden fries. ) was good but a bit messy because of the aioli, & the meat is not well seasoned. Filet mignon was very good, as was the Miso glazed salmon. Overall a good meal but not great bang for your buck at around $70 per person without booze. Keg offers better overall food & value.
This is a hidden gem in Montreal. When you think of Vargas it doesn't ring a bell as a talked about restaurant. However, it's twice I go to this restaurant for business suppers & its honesty amazing. The entrees are more on the expensive side however, the size of the entree is huge! It's so worth it. Go to Moretti & the same style of entree is the same price & it is half the portion. Now in terms of quality the food was fantastic! My colleagues & I will definitely go back. If you work downtown you need to go! I'd suggest sitting on the side of the bar since it's renovated.
Hier fut ma 3e expérience à ce restaurant & chacune de mes visites était en lien avec un événement corporatif. L'accueil est très chaleureux, débutant avec un cocktail 🍸 préparé par une équipe au bar, très compétente & sympathique. Ensuite, temps de passer en salle à manger avec des tables bien espacées & bien dressées. Un menu 4 services est servi, en plus de paniers de pains chauds. Le service de vin inclus par l'événement est bien respecté avec le remplissage fréquent de nos coupes. La nourriture est servie à une température parfaite pour les repas chauds, le tout est bien présenté & les aliments sont frais & savoureux. Le menu corporatif de cette visite consistait d'un choix de salade 🥗 César ou jardin, suivi d'un carpaccio de boeuf ou dumplings 🥟 frits aux crevettes 🍤. Ensuite, mon choix de repas principal s'est arrêté sur le filet de morue noir & pour clore la soirée, on nous a servi un bon dessert, frais & léger, au chocolat noisettes. Je conclus mon avis en remerciant l'équipe de service & celle de la cuisine qui ont très bien préformé tout au long de la soirée 💯
Très intéressant. Vous allez vous sentir comme dans un grand restaurant de New York. La rénovation du bar est superbe aussi.
My wife & I celebrated our 40th wedding anniversary by having dinner at Vargas. It was absolutely amazing. My wife had the prime rib, which was done to perfection, accompanied by the garlic mashed potatoes. She absolutely enjoyed it! I had the Beef Wellington. It was also amazing! I also had the lobster mashed potatoes, & oh my goodness, they were brilliant! We followed up our meal with the strawberry cheesecake. Wow, it too was amazing!! Our waitress/bartender Amy was very friendly & extremely professional. She is a great conservationalist & wise beyond her years! You are very lucky to have such an amazing employee. Bravo!
Waitress was amazing! She had to do it all at the bar & tables & took great care of us. Prime rib could be better & sea bass was a bit salty. Foies gra was great as well as beef tartare. Oysters were amazing as well.

Ordered Kansas aged steak for lunch. Tasted like I cooked it, not over a BBQ but on a Temu griddle. Unseasoned. Barely 1/2 inch. Tasted like steak you find on the clearance section of a low end supermarket. Baked potatoes top was great, bottom had the consistency of leather. Unimpressed. Service was great.
The bone-in rib cap steak is a unique find at steakhouses. It was delicious & fired beautifully. I enjoyed with the seasonal vegetables & cocktail while seated at the bar. I recommend & will return to try other menu items.
Was here on Saturday, F1 night. Had an absolute garbage dinner at The Keg the previous night (only place to get a seat unfortunately) The great experience I had at Vargus was due to the bar staff: Joanne & the blond girl (I apologize but I didn't get her name) These 2 girls are the most outgoing, qualified, personable bartenders /hostesses I have ever been around. Friendly from the initial "hello", great to chat with about things while still servicing the busy bar & service area. Smiles the whole time & it was crazy busy. Two of the most genuine people I have interacted with in a very long time. I'm from Ottawa & I would come up for a night just to have dinner because of these 2 girls. I was with a buddy, in for the weekend, & we had a great time. Steak & sushi were fantastic as well. Great place to have dinner for sure & I will be back. Thanks to everyone for the great experience :)
Food - their Lamb shanks, BBQ ribs, salmon plate are great. Tried their sushi for the first time, not bad at all. Onion soup is delicious with the old gruyere cheese. Cesar salad never disappoints. Their portion size varies from one dish to another. Service- nothing to complain about. Always good. Atmosphere- if you want a quiter ambience, do not sit near the bar. Otherwise, the ambience is great.
I brought an associate from out of town to Vargas not too long ago, as I've been several times before & always had a great experience. We requested to sit at the bar & ordered an assortment of appetizers, including, the shrimp cocktail, shrimp tempura, grilled angus beef satays & the tuna tartare, as well as, several delicious cocktails. The shrimp tempura was notably very delicious, but everything else was still very good; the food has never disappointed. The only downfall of this particular visit was the atmosphere on this specific night. Someone who looked to be either the manager or possibly a supervisor seemed to be hovering around the bar area, staring at the customers sitting at the bar for prolonged periods of time. As someone who has been there before, it felt very odd, & for my friend who had never been before, he felt very uncomfortable as a result of this individuals actions. It was a little disappointing & led us to cut our time shorter than we would've liked because we didn't feel very welcome. The bartenders that night were phenomenal & made one of the best espresso martinis i've had in a while (would recommend) Johanne & Cris were extremely kind & made our experience notably better. We loved talking to them & spending the night with them at the bar, excellent service! Overall, will be returning, as the restaurant is normally wonderful in all aspects, but this particular evening was a little bit disappointing.
