My only comment is in regards to my coffee bean preference. The beans used are not a dark roast, most commonly associated with an Italian roast. They are more acidic, & so for this reason, I probably won't go back for the coffee, but I definitely will for other things! This is really up to preference, though, everyone's coffee taste is subjective!
Wow. Some of the best baking I've ever had. The rustic sourdough is nice & chewy. The kouign amman is the perfect blend of crisp outside flakiness, & inside custardy texture. I love the breakfast sandwich, which is served on sliced bread made from croissant dough. & their coffee is high quality & the seasonal drinks are amazingly creative (I had a latte with corn-infused milk!) I also like the big window looking into the prep area, where you can watch delicious things being made before your eyes. This place is pretty exceptional overall. I don't live in Montreal but I'll be making a detour to Aube whenever I can.

It is quiet enough to work, but also cozy & a great space to meet & grab a lunch.
No contest, the pain de campagne sourdough is the best bread in the city, & the price is reasonable as well.
This was exactly what I wanted: a coffee/french bakery place. Superb help. Friendly & efficient. The latte & breakfast sandwich were so good, I got a latte to go, a baguette, a loaf of bread, & cookies to go. The breads were perfect. I want to drive the 378 miles to go back for more baguette. When I do return to Montreal, I will absolutely return.
My family is here visiting the city & this morning we picked up a fresh loaf of bread & I couldn't resist staying for a coffee & Chocolate crossiant! Was not disappointed. The crossiant not only looked like a piece of artwork it was delicious. Loved the atmosphere of this Cafe. Will be back next time we are here.
A crunchy pain au chocolate from the first to last bite.... & while it's in my mouth, not just the initial bite. Might be one of the best ones I have ever had. The Bread here is killer & the herb butter compliments the baking perfection.
Baking perfection, from the sourdough to the viennoiseries made with the finest locally sourced seasonal ingredients & fermented with expert craftsmanship. Their bread & focaccia is a gold standard to aspire to as a sourdough bread baker myself.
Aube is a fabulous bakery! During a week-long visit to the city, I went to Aube almost every day & kept finding new wonders. They have excellent bread (the best baguettes & specialty loaves) & delicious pastries, ranging from crispy croissants to cinnamon rolls & cookies. All baked on the premises & fresh as can be. The prices are also very reasonable & the service is excellent. On my last day in Montreal I loaded up with a large supply of goodies before driving back to the U.S.
