Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.
After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.
Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.
As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.
With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.
Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

the chai pear pastry was unfortunately super duper sweet, on the other hand i tasted the chai & the pear.

Cozy cafe, great for catching up with friends, studying or working. The staff were suuuper friendly! The food itself (almond-chocolate croissant & cookie) was good :)
Un café avec de bonnes pâtisseries, agréable pour s'y arrêtter. Simple & efficace dans son genre. Manque peut être d'un côté un peu plus chaleureux. Le personnel est très gentil.
Personnel arrogant
On est pas censé connaître les produits du magasin, donc quand on demande gentiment, une explication simple prend quelques secondes au conseiller mais fera un client satisfait
Très bonne boulangerie, j'aime beaucoup leur croissant. Ils font aussi de bonnes pâtisseries. J'ai déjà goûté leur tarte au citron meringuée qui était délicieuse & dernièrement j'ai pu goûté leur galette des rois qui était bonne, même si je ne suis pas fan d'habitude. Leur sélection de thé est très bien. C'est un bon endroit pour se poser, boire un café & manger une patisserie. Le seul bémol c'est les places pour s'asseoir le week-end sont limiter.
Habitue de venir par moment pour une pâtisserie, pâtisserie simple mais très bien faite & c'est ce qui me manquait dans certaine pâtisserie « haut de gamme » & j'ai voulu tester leur galette cette année.
Honnêtement une vrai dinguerie.
Pour moi la meilleure de Montréal

The viennoiseries are correct, although a bit small especially for their high price, but twice we've been there & both times the hot beverages were served barely lukewarm, practically cold! It's very disappointing, especially when it's winter & you're looking to warn yourself up with a hot drink...you need to assess & improve your barrista skills, it's freezing out there, we can at least expect a minimum warmth when ordering a hot drink. & I didn't even wait to taste it, the minute they put it on our table, I tasted & it was almost cold, so it wasn't me who waited too long to drink my latte. On the upside, the decor is very beautiful
Je suis venue pour la première fois dans la jolie boutique chaleureuse car j'avais commandé une couronne des rois provençale. Malheureusement la brioche , belle extérieurement était pâteuse à l'intérieur pas cuite & peu levée. Je ne sais pas si c'était dû au froid mais idem pour le pain au chocolat dont le feuilletage extérieur faisait envie mais qui avait des morceaux crus à l'intérieur. Les croissants un peu.moins.
J'habite la rive sud & j'avais fait des kilomètres pour venir chercher la brioche & j'ai été déçue... j'ai tout jeté car mon estomac ne me permet pas de digérer une brioche peu cuite...plus de 50$ de produits
Vraiment désolée de dire ça car j'aime encourager les artisans..mais ceci est dans un but d'amélioration.
it was incredible, I bought a croissant, a cookie & a baguette & they were all given to me warm & delicious. the food was fresh & some of the best pastries I've had in Montreal. It was a bit pricy but definitely worth it for what I got.
A little cozy place for having a delicious coffe with a pastry. We love it! Highly recommend.
Croissant excellent, chausson aux pommes divins avec une vrai compote de pommes, un feuilleté excellent !!! A retourner sans faute !!!
Coffee is great, the patisserie is delicious & same for their sandwiches. Prices are more then reasonable!! I definitely recommend this place to everyone :)
