Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.
After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.
Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.
As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.
With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.
Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Great pastries & service, it absolutely never disappoints. Bonus for the Tropeziennes, it really tastes like the one you find in Provence.
We were recomended this place as'the best bakery in Montreal' & while im not sure it deserves that title, it was pretty good. The atmosphere was really nice with lots of natural lighting, real plants, & well palced decor that worked with their theme. The staff was super friendly & since we didnt know what to get they gave a few recomendations. The chocolate pastry was flaky & light & decently fresh. I usually like the pastries that are a bit chewy or carmelized so maybe I should have gotten something else but it was still pretty good overall.

Been wanting to try this place for a while. I ordered a refreshing glass of fig lemonade & a pain au chocolat & aux amandes, which may have been one of the most decadent & delectable pastries I've EVER consumed. I ordered an assortment of patisserie to-go that I got a chance to sample which were very tasty & fresh.
I had also ordered a chocolate brioche in house which was a bit dry if I'm being honest, but the other pastries I ordered, along with the friendly service & comfortable atmosphere more than made up for it! I will no doubt be returning.
Lovely place for a coffee & a pastry or a quick lunch. Their baguette is amazing, the tuna sandwich is delicious & the vegan pastries are unbelievable. Highly recommend!

Beautiful place, not to many pastries, just a few pretty looking ones. I try the baba, not what I was expecting but good anyway. My pumpkin latte was a bit cold . I saw a woman grabbing a book , the have a small library whit some cooking books . Only a few tables, & some high chairs on the side.
Omg finally great/ real/ tasty French pastries & bread! Just go & try this gem it's soooooooo good! & very affordable for what you get! Just amazing!!

Heard really good things about this place so had to try it for myself. All the pastries we tried were so good. Super fresh & well made. The layers of the viennoisseries are super flaky with a lot of layers which is something I look for. The staff were super nice & welcoming. Wasn't super impressed by the coffee. Never been to Provence but it does seem like it can be a great introduction. Such a great find. Would definitely go back!
Unfortunately, it didn't match the expectations built based on most of the reviews here. Pain au chocolat is quite average, not flaky, butter flavour wasn't there. The only thing I liked about it was the chocolate used. There are way better croissants & pain au chocolat in Montreal. We liked the eclaire chocolat but it's over $7, not worth the price in our opinion. We also tried the tiramisu / chou which is over $8. It didn't taste like tiramisu & the chou was nothing special for the price paid. The coffee shop itself is nicely decorated, simple but cute. There are only 3-4 tables & the rest is a long bar with stools. Staff is welcoming & quick to get your order. On-street parking was easy to find & free. Overall, I'm not french but it didn't meet my expectations, one of the things I love about Montreal is the variety of great french pastries & boulangerie so I'm always open to try new places. Also, I found it to be overpriced.
Super cute place, stopped in for a snack & coffee with my family of four. Lavender latte was something interesting to try, pastries were delicious & the vibe was fabulous. You can tell a lot of love went into this place. Super happy to have stumbled upon it.
Decent pastries but a bit pricey for the location & the quality of the products
