Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.

After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.

Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.

As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.

With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.

Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Cozy cafe, great for catching up with friends, studying or working. The staff were suuuper friendly! The food itself (almond-chocolate croissant & cookie) was good :)

Très bonne boulangerie, j'aime beaucoup leur croissant. Ils font aussi de bonnes pâtisseries. J'ai déjà goûté leur tarte au citron meringuée qui était délicieuse & dernièrement j'ai pu goûté leur galette des rois qui était bonne, même si je ne suis pas fan d'habitude. Leur sélection de thé est très bien. C'est un bon endroit pour se poser, boire un café & manger une patisserie. Le seul bémol c'est les places pour s'asseoir le week-end sont limiter.

Je suis venue pour la première fois dans la jolie boutique chaleureuse car j'avais commandé une couronne des rois provençale. Malheureusement la brioche , belle extérieurement était pâteuse à l'intérieur pas cuite & peu levée. Je ne sais pas si c'était dû au froid mais idem pour le pain au chocolat dont le feuilletage extérieur faisait envie mais qui avait des morceaux crus à l'intérieur. Les croissants un peu.moins.
J'habite la rive sud & j'avais fait des kilomètres pour venir chercher la brioche & j'ai été déçue... j'ai tout jeté car mon estomac ne me permet pas de digérer une brioche peu cuite...plus de 50$ de produits
Vraiment désolée de dire ça car j'aime encourager les artisans..mais ceci est dans un but d'amélioration.

it was incredible, I bought a croissant, a cookie & a baguette & they were all given to me warm & delicious. the food was fresh & some of the best pastries I've had in Montreal. It was a bit pricy but definitely worth it for what I got.

Happy to have this cafe near by apartment. The almond croissant is incredible & I look forward to trying their other pastries! The staff are always super kind.

Very cozy place to have your delicious coffee + croissant! I tried the cookie & the cheddar croissant! Delicious! Anxious for my next visit! Love it!

Je reviens tout juste d'Aix-en-Provence, donc j'estime que l'univers m'a fait un petit clin d'oeil en me faisant tomber sur cette pépite.
Dès le premier regard, j'ai su que j'étais au bon endroit.
Les croissants sont aussi bons qu'ils sont beaux, idem pour les pains au chocolat & les chouquettes - qui ressemblent enfin à de vraies chouquettes !
C'est un peu cher, certes, mais je comprends qu'il faut bien vivre de son activité.

Je vais dans ce café presque quotidiennement, le staff & les produits sont exceptionnels. Pour moi, de loin les meilleurs croissants en ville. De plus, le fait qu'on voit le staff préparer le tout en cuisine derrière justifie de loin le prix de certains produits. Il y a plusieurs cafés dans le coin & les prix restent très compétitifs. Les gens qui se plaignent des prix sont probablement habitués à prendre leur café au McDo ou Tim Hortons, j'ai du mal à comprendre.

Unfortunately, it didn't match the expectations built based on most of the reviews here. Pain au chocolat is quite average, not flaky, butter flavour wasn't there. The only thing I liked about it was the chocolate used. There are way better croissants & pain au chocolat in Montreal. We liked the eclaire chocolat but it's over $7, not worth the price in our opinion. We also tried the tiramisu / chou which is over $8. It didn't taste like tiramisu & the chou was nothing special for the price paid. The coffee shop itself is nicely decorated, simple but cute. There are only 3-4 tables & the rest is a long bar with stools. Staff is welcoming & quick to get your order. On-street parking was easy to find & free. Overall, I'm not french but it didn't meet my expectations, one of the things I love about Montreal is the variety of great french pastries & boulangerie so I'm always open to try new places. Also, I found it to be overpriced.
