Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.

After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.

Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.

As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.

With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.

Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Lovely place for a coffee & a pastry or a quick lunch. Their baguette is amazing, the tuna sandwich is delicious & the vegan pastries are unbelievable. Highly recommend!

'J'ai récemment fait appel à leurs services de traiteur pour l'anniversaire d'une amie, & ce fut une expérience tout simplement parfaite ! Tout était exactement comme je l'avais imaginé : des sandwichs savoureux, un plateau de fromages généreux & raffiné, & des desserts absolument délicieux. D'ailleurs, je prends souvent leurs pâtisseries, & c'est rare de trouver des desserts aussi bons, typiquement français, avec ce petit goût de fait maison. Le personnel est en plus très sympathique & à l'écoute. Une adresse que je recommande vivement!

J'ai commander un flan avec coulis de caramel pour 39$ plus taxe il étais décadent je pense que c'est une des meilleures pâtisserie dans le sud ouest rien a avoir avec les boulangerie commercial.

Excellente pâtisserie, tout est absolument délicieux. Le personnel est très agréable & la décoration est ultra mignonne. L'endroit parfait pour un petit déjeuner, un brunch, un lunch ou un petit café. Le latte à la lavande est un must, tout comme la tarte tropézienne, le Paris Brest, l'éclair à la lavande & la tarte meringuée au citron. Tout est exquis !!!

Très propre D'est que tu rentre tu sens la lavande ça me rapelle de mon enfance en France dans ses champs de.lavanade la même sensation Le plus intéressant il y a des variété & des patisserie fait avec la lavande & même les boissons Un beau coin pour se reposer ou lire un livre je m'en vais souvent la bas quand je veut me déconnecter Équipe souriante & serviable Décorations magnifique Un beau concept à Montréal à visiter je vous conseille. C'est ma première galette des rois. La serveuse est sympa & patiente. La galette est délicieuse, & pas trop sucrée (Ça c'est très important pour moi). Je suis un peu curieuse, qu'est-ce que c'est dedans?
