Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.

After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.

Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.

As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.

With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.

Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Delicious pastry shop. Strong, quality coffee, excellent service. Strong wifi & ambiance. Truly a great pastry shop/cafe. I came on a Tuesday & it was perfect pace, but too busy but still some others working around me I felt inspired. I got a decaf americano & a suisse pastry. The pastry so so good. It was like a sweetened savory one but in a good way with good balance in flavor...a bit pricey around 8 dollars for one, but was good. The decaf americano was also good. They also make a homemade chai. It's subtly sweet & spicy, good drink as well. Highly recommend!

J'ai découvert la boulangerie grâce à un Too good to go en 2024. Le pain & les viennoiseries étaient vraiment bons. Dernièrement, j'ai acheté des pâtisseries, toutes délicieuses. Mention spéciale pour la fleur d'agrumes ! Je reviendrai !

Ce petit bijou est un délice. C'est à environ 35 minutes de chez moi & ça vaut toujours le détour. Les pâtisseries & les plats sont toujours frais & délicieux. De plus, le service est vraiment sympathique ! J'y suis allé 5 à 7 fois ces deux derniers mois & presque tous les clients que j'ai croisés repartent avec le sourire, ce qui est très bon signe.

This little gem is a delight. The pastry & food are always fresh & delicious. Plus, the service is super friendly! I've been here 5-7 times in the last couple of months almost every person I've seen come in leaves smiling, so that's a very good sign. It is about 35 mins away from my home & always worth the trip.

Un incontournable dans le quartier! L'accueil est sympathique, le service est amical & attentionné. Je me sens toujours bien accueillie & l'on ressent bien le souci du détail de la part du proprio. L'ambiance est chaleureuse avec ses touches déco qui rappelle la Provence. & que dire des pâtisseries, elle sont toutes délicieuses, particulièrement les financiers, tartelettes au citron, le noisettier & les éclairs à la lavande. Aussi, quelques sandwichs typiquement français.
Le rapport qualité-prix est excellent, pour des ingrédients & produits d'une telle qualité, faits sur place. Je fréquente cet endroit régulièrement autant pour l'accueil que pour les produits!
