Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.
After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.
Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.
As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.
With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.
Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Very cozy place to have your delicious coffee + croissant! I tried the cookie & the cheddar croissant! Delicious! Anxious for my next visit! Love it!
Great coffee & fantastic ambience. The owner was ever present & very hospitable. The food looked like it should have been on the he cover of a magazine. Can't wait to return.
Best coffee place in Saint Henri
Super friendly people & amazing food
My favourite is the cheddar croissant
The best pastry shop in MTL! Everything is tasty from the éclaire, to the meringue au citron, the crème brûlée & the coffee! They also have fresh squeezed orange juice! The place is aesthetically nice & the staff is friendly! :)
A neighborhood pastry shop serving good coffee drinks too. Dine in available also.
Very welcoming, beautiful place & very warm service. I loved it & the coffee/ the pastries were amazing! 12/10
Delicious pastry shop. Strong, quality coffee, excellent service. Strong wifi & ambiance. Truly a great pastry shop/cafe. I came on a Tuesday & it was perfect pace, but too busy but still some others working around me I felt inspired. I got a decaf americano & a suisse pastry. The pastry so so good. It was like a sweetened savory one but in a good way with good balance in flavor...a bit pricey around 8 dollars for one, but was good. The decaf americano was also good. They also make a homemade chai. It's subtly sweet & spicy, good drink as well. Highly recommend!
Amazing food & coffee & wonderful service!! I recommend to anyone looking for a cute little coffee spot

Lovely place for a coffee & a pastry or a quick lunch. Their baguette is amazing, the tuna sandwich is delicious & the vegan pastries are unbelievable. Highly recommend!
Nice little coffee shop to enjoy on a Sunday afternoon with a good cup of coffee & a nice pastries on the side.
Lovely cafe! Super tasty pastries & coffee, always greeted with a smile & excellent vibes to start the day. Have been there multiple times & will be back!
Fantastic spot for some delicious coffee, fresh handmade pastry & a wonderful atmosphere. Highly recommend!
Heard really good things about this place so had to try it for myself. All the pastries we tried were so good. Super fresh & well made. The layers of the viennoisseries are super flaky with a lot of layers which is something I look for. The staff were super nice & welcoming. Wasn't super impressed by the coffee. Never been to Provence but it does seem like it can be a great introduction. Such a great find. Would definitely go back!
