We decided to come to Projet Pilote after bailing the poutine line because it was so long. I'm so happy we did! When we arrived, we requested to be seated at the bar which was accommodated so kindly by Jeanne. When we were seated, we were greeted by Tim, the bartender. I was craving a dirty martini, & they happened to have one featured on their bar menu! It was a no-brainer & so deliciously made & elevated from a'regular' dirty martini. The spirits were fat washed in bacon fat which gave the drink a unique depth, but without overpowering smokiness. We also had the daiquiri which was absolutely incredible with rhum & the addition of green chartreuse. We will be thinking about it for a long time.

We also got some bites to share: the asparagus, frites, salad, & Argentine chorizo. All more absolutely delicious & much more elevated & complex than the menu implied. We finished with a shot of Fernet with Tim :)!

Definitely don't miss out on Projet Pilote, especially if you love creative & delicious cocktails.

I went wirh some friends to celebrate my birthday & the team made sure we enjoyed ourselves. Jeanne, Elliott & Ben were very accommodating, made us feel comfortable & very welcome. This is definitely one of my favourite places in Montreal & the team makes the whole difference.

Belle ambiance, bons plats & beaux choix de vins & cocktails le tout accompagné de supers conseils des serveurs! C'était une soirée achalandée, & nous étions un groupe, nous avons eu une belle soirée!!

Nous étions un groupe de 12 pour un bachelorette un samedi soir achalandé. Malgré l'occupation, le staff a su nous offrir un bon service, nous avons eu des recommendations sympa pour le vin & boissons, la nourriture était bien exécutée. L'ambiance est sympathiqe & l'endroit est beau! Nous avons passé une belle soirée & nous remercions le staff de nous avoir bien traités!!

J'ai adoré le cocktail sans alcool au moût de pommes chaud (qu'ils n'auront plus pour l'été).
Bon service.
🚾 il y a 3 toilettes au fond du restaurant.
