I've been here plenty of times. The staff is always very kind. They have a great selection of drinks & their distillery is a unique + to make this place one of my favourite bars in the city.
Le Bar Copilot est l'endroit parfait pour se rafraîchir après une chaude journée d'été. L'ambiance est calme, élégante & agréable, avec une belle fraîcheur qui invite à la détente.
Le service était exceptionnel : une équipe attentionnée, professionnelle & accueillante. Les serveurs étaient à la fois charismatiques, courtois & très à l'écoute.
Les cocktails & les plats étaient tout simplement remarquables.
J'ai dégusté un cocktail acidulé aux agrumes, parfaitement équilibré & rafraîchissant. Quant aux pétoncles servis avec des fraises fermentées, c'était une combinaison audacieuse, raffinée & absolument délicieuse.
Une expérience gastronomique mémorable dans un cadre unique. J'y retournerai avec grand plaisir !
We decided to come to Projet Pilote after bailing the poutine line because it was so long. I'm so happy we did! When we arrived, we requested to be seated at the bar which was accommodated so kindly by Jeanne. When we were seated, we were greeted by Tim, the bartender. I was craving a dirty martini, & they happened to have one featured on their bar menu! It was a no-brainer & so deliciously made & elevated from a'regular' dirty martini. The spirits were fat washed in bacon fat which gave the drink a unique depth, but without overpowering smokiness. We also had the daiquiri which was absolutely incredible with rhum & the addition of green chartreuse. We will be thinking about it for a long time.
We also got some bites to share: the asparagus, frites, salad, & Argentine chorizo. All more absolutely delicious & much more elevated & complex than the menu implied. We finished with a shot of Fernet with Tim :)!
Definitely don't miss out on Projet Pilote, especially if you love creative & delicious cocktails.

My fiancé & I had the BEST experience here. A+ food, service, & atmosphere! We were visiting Montreal from Boston & spontaneously chose Projet Pilote for dinner (based on the reviews!) while we were a few blocks away at Quai des Brumes, after enjoying a wonderful folk duo's set. From the moment we walked in, it was such an enjoyable evening! We shared a fun laugh with the friendly host about how we speak English but we enjoy practicing French. Our server Ben was awesome! He made us feel so comfortable, like we were all friends right away! My cocktail, l'abricot melba, was unique in the best way. Our dishes, the striped bass & the Toulouse sausage, were both such delectable combinations of flavors. We appreciated the smaller portion sizes; it was the perfect amount of food! The sauces were so tasty that I joked to Ben I wanted something to soak up the leftover sauces on our plates & he offered to bring us bread. I said no thanks, but I actually should have said yes to the bread because the sauces were that good! We then made room for a mouthwatering chocolate mousse that we paired with a dessert wine. C'etait parfait!
I'm a regular & I can say this is definitely somewhere to have a drink to catch up with a friend or have a simple nice date. If you come to just pass by & have a cocktail, this is definitely the place. If you're here to also eat, you won't be deceived! They make both their menu & their cocktail menu seasonal (with & without alcohol). The head bartender also makes his own non alcoholic liqueur so for the people that don't drink, this is your place! The creations there are as unique & as personalized as possible. The entire staff is friendly & I always end up in a small conversation with each & every one of them. I also pay different totals every so often so I won't put a specific price but I promise you won't be deceived at Projet Pilote!

La cuisine est ok. On est pas sur du gastro, mais c'est efficace.
Par contre j'y suis allé un vendredi soir &... la musique était très (trop) forte. L'ambiance, tout ça, je comprends. Mais j'avais du mal à parler avec la personne juste à côté de moi.
J'y retournerai parce que... la bière!
Tried a bunch of stuff including a few of their seasonal offerings. The salad was absolutely unique. I've never had anything like it before & it absolutely slayed.
The chips & dip were incredible. They were so good that I ordered some fries to finish off the dip. The fries were tremendously okay.
Wasn't planning on getting the smash burger, but then I smelled it when it was delivered to the table next to me. Did not disappoint. Didn't get it with bacon so can't comment on that, but with everything else it was delicious & well-rounded.

Superb cocktails & unique beers brewed within the premises. We tried the elegantly perfumed Radler, & the chocolatey Czech Lager. Food was also amazing. Decently priced.
