When you walk into a vibrant restaurant specializing in the bold, tongue-numbing flavors of traditional Chinese cuisine, you naturally expect the food to be the undisputed star of the show. However, during my recent visit to Flemme de Sichuan, the phenomenal dishes were given a serious run for their money by the absolute masterclass in hospitality provided by our phenomenal server, Jia. From the moment we sat down until the second we walked out the door, Jia transformed a simple dinner into an entirely unforgettable culinary experience that I cannot stop thinking about.
Navigating a robust & extensive Sichuan menu can sometimes feel intimidating, especially when trying to balance the intense, fiery heat of dried chilies with the unique, tingling sensation of authentic Sichuan peppercorns. This is exactly where Jia immediately shined. She didn't just hand us the menus & walk away; she took the time to genuinely engage with our table, asking thoughtful questions about our spice tolerance & flavor preferences. Her recommendations were nothing short of brilliant. She expertly guided us toward a perfectly balanced spread, suggesting we pair the intensely spicy Water Boiled Beef with a milder, deeply savory smashed garlic cucumber salad to cool & cleanse the palate. Her deep, passionate knowledge of the menu & the regional ingredients made us feel entirely at ease.
What truly sets Jia apart from other servers in the industry is her impeccable sense of timing & steadfast attentiveness. Sichuan food practically demands a steady flow of ice water & steamed rice to temper the rising heat, & remarkably, our glasses & bowls were never empty for more than a few seconds. Jia seemed to possess a sixth sense for exactly when our table needed attention, yet she was never overbearing, rushed, or intrusive. She moved effortlessly through the bustling dining room, checking in with a warm, genuine smile that made us feel like valued friends rather than just another numbered ticket in their point-of-sale system.
Beyond her absolute efficiency, Jia's charismatic & kind personality elevated the mood of the entire evening. Halfway through the meal, she noticed we were particularly enjoying the house-made chili oil & surprised us with a small, complimentary tasting of a limited-batch reserve chili crisp that the kitchen was experimenting with. It was a completely unprompted, incredibly thoughtful gesture that showcased her dedication to going above & beyond for her guests. She even took a moment to explain the specific roasting process of the spices, turning a simple side condiment into a fascinating conversation point that highlighted her culinary passion.
In an industry where genuine, passionate service is becoming increasingly rare, Jia is a massive breath of fresh air. She is the quintessential professional: deeply knowledgeable, remarkably efficient, & wonderfully personable. Flemme de Sichuan is undoubtedly serving up some of the most vibrant, complex, & delicious food in the city right now, but it is Jia's unparalleled service that guarantees I will be returning very soon. Amazing Sichuan Chinese spicy dishes. Waiting time is not long but totally worth it. A must try in Montreal! Server Edmond's recommendation is really good. Good service & Excellent food.

I recently dined at Flamme du Sichuan & had a pleasant experience overall. As someone who is Chinese, I would say this is a solid Chinese restaurant that offers a good representation of Sichuan cuisine. However, it didn't quite meet my personal expectations.

The dishes were flavorful & well-prepared, with the bold, signature spice that Sichuan food is known for. That said, the food does lean quite spicy-so if you're not someone who handles heat well, I'd recommend asking the server to adjust the spice level.

While everything was enjoyable, I felt that some dishes could have been more refined or authentic in depth of flavor. Still, it's a good option if you're looking for approachable Sichuan food in a comfortable setting.

Overall, a decent spot, especially for those who enjoy spicy cuisine, but there's still a bit of room to improve compared to more traditional or standout Sichuan restaurants.

Great authentic food! Very worth it however it would be nice to say how spicy some plates are. I usually eat spicy but the food was even too spicy for me. Other than that very nice place.

I recently tried Flame du Sichuan in Montreal after hearing a lot of hype about it, but unfortunately my experience was very disappointing.
To start, we had to wait about 20 minutes outside just to be seated, which was already a bit frustrating. When we were finally brought in, we were seated right near the door, & every time it opened, cold air came in. I understand that restaurants get busy, especially popular ones, so this part was manageable, but it set the tone for the rest of the visit.
I was there with my family, & we specifically asked for non-spicy dishes. Despite that, the food that arrived was extremely spicy, to the point where it was difficult to eat & clearly not what we had requested. It felt like our request was ignored, which was disappointing given how clear we were when ordering.
The worst part of the experience, however, was related to food safety. I clearly told the staff that I am allergic to shrimp, yet when I started eating my stir-fried rice, my brother noticed a piece of shrimp in the dish. If he hadn't pointed it out in time, I could have ended up in the hospital. This is not a small mistake, it's a serious issue, especially for a restaurant that serves many customers with allergies.
Overall, the food was not worth the wait, the hype, or the price, & the lack of attention to dietary restrictions was extremely concerning. I was really hoping for a better experience, but sadly, I would not recommend this restaurant, especially to anyone with allergies or specific dietary needs.

We were a group of 6 on a Monday evening. Service was excellent & fast! I hear that this place has a long wait during the weekends so plan accordingly! They do not take reservations. This is truly authentic Sichuan cuisine & fair warning, some dishes are spicy 🌶? my favourite was the tomato & egg dish 😅 don't sleep on it! Generous portion for the price, even better when you can share as a group so you can try more.

A very unique experience in the heart of Montreal. The portions are all shareable which gives it a wonderful, joyful meal experience for your friends & family!
Be mindful that most plates are very spicy 🔥 but there are some that are not.
Beef tripe & tofu was my favorite!!! The udon noodles also added a special touch to my meal!

Possibly the spiciest thing I've eaten in my entire life (my spicy tolerance is not very high). Overall it was really good & would go again to try out other dishes. The fish was a little bit too spicy & wouldn't get it again tbh. Came to line up at 12 & there was already quite a long lineup so try to come early if you don't want to wait long.

Well, I have to say it
Probably the best & most authentic sichuan restaurant we have in montreal
A little bit long line, but if you can get in from the first 10 tables , you should be ok
Personally we waited from 11😅& luckily there only 1 group of 3 waiting ahead of us
The decor is very old fashion chinese street restaurants vibe, almost feel like a museum
The staff welcomed us in very passionately & friendly & seated us
Offered apron as well as hair band for the long hair girls (which you may keep)
We ordered both dessert, which both are very good
As main, we ordered zi-gong style stir fried chicken (boneless) + spicy frog
I would say the chicken is so amazing that I can't stop eating it 🤤? even all the vege that inside the dish are so flavourful
The frog taste almost like spicy fish, & the zucchini in there just such a nice touch
Totally worth going, only if the line up is not too crazy 😅

The interior decorations & the liveliness of the place really makes you feel like you are eating at a restaurant in China out on the street & I really enjoyed that atmosphere. The problem is that the restaurant is really popular & that they do not take any reservations. You have to go in & give your name & phone number & they will call you back when a table is available. However, the wait time is usually around 2 hours on the weekend which is quite a lot. The service was great. The waitress was patient & attentive. They took the time to explain us their menu & give us their recommendations & also explain to us their level of spiciness. The food itself was quite fantastic. The food is indeed spicy, especially if you choose to go with the full spice, but the spiciness is a great addition to the flavours of the dish & not overwhelming the rest of the ingredients. The prices seem a bit elevated when you take a look at the menu but the portions are pretty large which does make up for it. I do feel like it's an amazing place for a larger group to share a lot of different dishes & just enjoy the food together.
