Unreal! Some of the most inventive & genuinely surprising dishes we've had in a long time. The crab ravioli is as good as the reviews say. Every other dish was equally well balanced & nuanced. & the wine recommendations were perfectly matched.

It has been a long time since I was truly surprised by each dish placed in front of me. The food at Vin Polisson did just that- every plate had at least one element that elevated it while bringing it all together in such perfect balance. Whether it was camelina oil & rhubarb juice in the scallop ceviche, fermented tomato purée under the beef tataki, crisped nasturtium leaves & almond crunch on the veal sweetbreads, or the browned butter base for the excellent snow crab ravioli, I was transported. Service was excellent, as were the wine pairing recommendations.
This place is a must-try.

One of the best wine bars I've been to.

I had no reason to stop in this town, but this place was the only one mentioned in the Michelin guide. So I figured I'd stop by for lunch. Came in right at opening on a Friday afternoon, & the space wasn't busy at all. A small setup like a classic wine bar, but the wine list & food were unique.

I don't go to wine bars often, but this one caught my eye. They had an entire list dedicated to Eastern European wines from places like Hungary, Germany, & Slovakia. & the French-inspired dishes were built to match. Almost zero acidity & mellow seasoning in all the dishes, which made the wines necessary complements.

For food, I ordered the vegetable terrine, rainbow trout crudo, & braised cabbage. Everything looked beautiful, but the terrine & crudo were my favorites. The terrine was an even mix of egg & onion terrine, which were like soft custards. The black-garlic butter on the side was more savory than sweet, & the smoked leek ash added a dry, charcoal-mineral snap that the terrines needed. With the brittle breadsticks, it almost felt like a savory vegetable pie filled with mousse.

The trout crudo (apparently the last of the season) was incredible. Mostly belly cuts, sliced into long, ribbon-like strips that almost moved like noodles. Barely seasoned, just a light touch of salt & olive oil, which allowed that cool, buttery texture to speak for itself. Definitely one of the best trout crudos I've had in recent memory.

The glass I had, a white blend from Eastern Germany, was soft-edged with a rounded finish. Somewhere between floral & mineral. It paired really nicely with everything on the table. Not sure if they always focus on Eastern European wines, but if they do, I'd gladly detour through this town again.

The Michelin Recommendation is extremely well deserved. You will not be disappointed. For two people, I suggest around 5 dishes & it you want to cut down on costs, split the wine glasses in two but don't miss out on the wine because they're very special & you cannot find them at the SAQ.

Une découverte agréable, mais qui ne justifie peut-être pas un détour.

Nous avons visité Vin Polisson à Sherbrooke, recommandé dans le guide Michelin Québec (BIB Gourmand). Le lieu a du charme & rappelle certains petits restos de quartier à Montréal. Cependant, le niveau sonore est très élevé, ce qui peut nuire à l'expérience.

Les raviolis au crabe étaient excellents. Le chou manquait toutefois de profondeur pour tenir comme plat principal. La joue de boeuf, bien cuite, évoquait une cuisson maison plus qu'un plat gastronomique. Le crudo de truite était agréable, mais difficile à partager. Belle carte des vins, avec quelques propositions originales. Service attentionné, malgré quelques lenteurs.

Si j'étais de Sherbrooke, j'y retournerais volontiers. Mais pour nous, qui avons parcouru plus de 80 km, l'expérience n'a pas été assez marquante pour valoir un tel détour.

We visited Vin Polisson in Sherbrooke after seeing its BIB Gourmand mention in the Michelin Guide Québec. The small space has charm & is reminiscent of many cozy Montréal eateries. However, the noise level is quite high, which affected our enjoyment.

The crab ravioli were truly excellent. The cabbage dish lacked depth to stand alone as a main. The braised beef cheek was tender & flavorful, but more reminiscent of a good home-cooked meal than a standout fine dining dish. The trout crudo was nicely seasoned, though hard to share. The wine list was interesting, with a few offbeat selections. Service was courteous & professional, though a bit slow at times.

We LOVED this spot. While staying nearby in our first trip to the eastern townships of Canada, we read the reviews for Vin Polisson & were not disappointed. The food was great, for both me - a vegetarian - & my husband who is not a vegetarian. We enjoyed meeting the chef Isabelle who is delightful. The owner Charlie could not have been nicer, helping us pick the best wine choices. We also bought a bottle to take to our hotel because they have the most interesting selection. We loved the atmosphere, people sitting near us were also friendly, & the service was great. All in all a wonderful experience & we cannot wait to come back to this part of Canada again. It will definitely include a visit to Vin Polisson!

Vin Polisson lives up to the lofty reviews. I really enjoyed watching the staff prepare exquisite dishes from a limited menu in a very tight space. The dishes were unique & creative, in some cases modern touches on more classic meals. I'd love to go back. The wine selection was better than most fancy restaurants I've been to in Toronto & New York. The food was better than what one would get at a one Michelin star restaurant in a bigger city. I would not expect a world class restaurant such as this in Sherbrooke, but it turns out Sherbrooke has several of them.
