Vargas est perçu comme une adresse de qualité offrant une palette variée allant des steaks et viandes maturées tels que ribeye, filet mignon, tomahawk et prime rib, à des plats de fruits de mer et des sushis, avec des desserts soignés et des sauces appréciées; l'ambiance et la présentation des plats sont souvent soulignées comme exceptionnelles et le cadre est décrit comme chaleureux et élégant, parfois animé avec une rénovation du bar rappelant un grand restaurant de New York; le service est généralement apprécié pour son professionnalisme et sa convivialité, mais des observations ponctuelles sur la lenteur ou des erreurs de plats existent, compensées par des serveurs attentifs et des conseils avisés; les portions et la qualité des ingrédients sont louées et les menus du midi ou les offres table d'hôte sont vus comme de bonnes valeurs, même si certains commentaires signalent un rapport qualité-prix variable selon les plats et l'occasion; dans l'ensemble Vargas apparaît comme une destination fiable pour des dîners importants et des repas d'affaires, avec une offre attrayante et une expérience de salle à manger qui peut être mémorable.
We dived in here during the heavy snow earlier this week, cold & wet. We were met with excellent friendly service. Burgers, steak & veggie option were great & the wine list was excellent. Probably the best food we've had all week on our vacation in Montreal (much better than Keg!).
Très bon restaurant Très bien placé en centre ville Seules les frites ne sont pas excellentes, ce serait meilleur si c'était des frites fraîches faites maison
3e fois au Vargas, probablement la derniere. J'y ai ete mieux servi lorsque j'y ai depense entre 200 a 300$ au lieu de 600 a 700$. La qualite de la nourriture est toujours presente, mais si le service client compte pour vous & que vous n'etes pas un habitue evitez cette place. Avoir ete au Farside, au Deville, au Mirella's ou a la limite meme au Rib&Reef nous aurions ete mieux servis qu'ici. Go where your money is appreciated. Point blank. Au moins ma chienne aura un bon reste de moelle oeuse a deguster comme collation.
Les plats sont bons & les aliments frais.Bon service & bonne ambiance, pas bruyant du tout ,pas de musique forte non plus. Bref,bien pour passer un bon moment au centre ville en toute simplicité avec de belles vues sur la rue .On peut relaxer & manger dans un bel endroit. Il y a du personnel, chose rare & pas d'attente. Alors c'est réussi.

The food & service (thanks to Tamara) were impeccable. I would put this exceptional experience on the same level as a 4 diamond Castel & Resorts. Perfect for a business lunch, as the noise is minimal & perfect for establishing business relationships. Congratulations to your entire team... You were utter perfection.

Can't believe I had never been before... my husband brought me here for Valentine's Day... & what a great meal it was! We ordered: shrimp tempura, beef satay, cap steak, roast beef, grilled mushrooms, fries, & baked potato. My water glass was never empty, the service was excellent overall. While I didn't like the peanut sauce with the satay, the meat was super tender & flavourful on its own, & we were happy the sauce was on the side. The mushrooms were insanely delicious as was my cap steak, the roast beef was good, just nowhere near as good as my steak... looking forward to our next visit!
Decor & atmosphere nice. Service was A+. Prime rib was good but not the best I ever had. Prices are very reasonable for a downtown higher end restaurant. 28$ for table d'hôte, I consider this value for downtown. Will definitely go back
It was a bitterly cold Feb 24 when we four lady friends who just attended mass at the nearby St Patrick's cathedral were both freezing & famished on the walk back to our hotel. We all agreed to have dinner at the first restaurant we'd come upon, any restaurant. Then there was Vargas just after a few blocks. If that wasn't an answered prayer, I don't know what is. Anyway, we went in, & had a totally unforgettable dining experience, courtesy of our server. His warm & engaging personality more than made up for the frosty & condescending welcome from the receptionist. The ultimate salesman that he was, we went for his suggestions on a porterhouse entree, with all the best accoutrements & potables, then finally capped with coffee & a shared cheesecake. Altogether, it was a most wonderful evening for these women on a weekend getaway to Montreal. Sebastian, you're the best!!! We hope to see you again the next time we visit your beautiful city.

The food was disgusting.ordered a VIP platter to share with friends & for 64$.. it was nooot worth it at all. I could have gotten the party pack at M&Ms for 20$... the drink was good tho. This place used to be so good! The waiters seem annoyed as hell like it hurts to smile. Blah. Never again.
We are at this restaurant yesterday & had an amazing time. The food was amazing. The waiter Sebastian was very good in making our stay comfortable. Even though he is not really sincere in looking after us, but he made our stay worth it. You can tell that he is trying his best to make us comfortable but I know he is only doing his job. But the sincerity is not really there. Pushing us to buy expensive food not letting us decide want we wanted. I think he is thinking we have no money to spend, but we proved him wrong. The Manager trying hard to accommodate us & trying to talk to us, maybe sizing us up if we have Mon to pay. Really a very weird feeling. First time here at this restaurant last night. We were hungry & new to the area, we had no choice but to eat here. The welcome that we received was very disappointing but we stood our grounds to stay. The two Ladies at front was so rude & prejudice. Looking at us with disgust because we are Asian & not formally dress because we are on vacation. The way she asked the question if we have reservation is totally rude. If I want to hang up my coat in the coat cart was totally rude. We were thinking of leaving but we stood grounds to show them. The looks that we received are not pleasant. But at the end Sebastian tried really hard to make us comfortable. You can really tell that sincerity of every one was not there. I find this restaurant full of prejudice people. From the Manager , the hostess & waiter. So if you are Asian or miniority looking make sure you dress up going to this restaurant so they don't look at you weird. Now I know why people not liking Montreal. Very disappointed in treating us. Not a real welcomeing place if you ask me. Medy

Sebastian made our night. we went out for a bachelorette & he was so much fun, knowledgeable about the menu & had many great recommendations. We are not even from montreal & would definitely make the trip out again just for him !
The food was pretty good. However, the coffee is so bitter that I can't drink it. Very old & not fresh taste. My friend & I took a sip & stood up. & one of the servers, Old Woman, had a very stiff attitude, which was unpleasant. I think people like that shouldn't work as servers.
