Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.
After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.
Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.
As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.
With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.
Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Alors oui l'endroit est magnifique, bien décoré avec les même affiches que j'ai chez moi. En revanche quand j'ai vu les prix, j'ai commencé à me poser des questions mais je me suis dis, ok a voir si c'est bon. & je dois dire que le croissant était fade, il manquait de goût & n'était pas assez poussé. Les pâtisseries sont mignonnes & petites mais pareilles, le goût n'y est pas. Je continuerai à allez sur Well pour mon pain & mes croissants. & l'accueil était comme les croissants & surtout comme nous les français : hautain 😁. Dommage car je vois passez des story's Instagram & cela me donnait envie de retrouver ma chère Provence.
Pâtisseries & viennoiseries délicieuses. Service agréable & lieu très bien décoré. Un petit moment en France ... à l'autre bout du monde. Merci !
While the croissants are exceptional (crunchy exterior, soft airy interior. & rich butter flavour), the coffee was a huge disappointment. I ordered a small almond milk cappuccino & it was so hot that it burned my mouth. When I went back in to inform the barista that it was way too hot, she became defensive & told me that's how it's done - she has to steam almond milk longer to get a froth. Other coffee shops don't seem to have this challenge so it's either an issue with the brand or the handler. Fortunately someone else stepped in & offered a replacement (which unfortunately was also too hot). There are better coffee shops in the city - it's not worth the detour.
Miam .. ! L'éclair a la lavande était très bon & délicat, la pâtisserie "Coco-mango-coriandre" était incroyable aussi, & le mi-cuit de chocolat, un régal aussi ! Une belle adresse pour un moment de délicatesse :)
Amazing coffee place in Saint Henri. It really deserves to go & take a coffee & bread at the place.
The sandwich à la dinde & au brie served here is the best in Montréal. I have made many sacrifices for it. My waistline...my wallet...my ability to get through a single day without purchasing it for a month straight...the list goes on. Perhaps I'd be a better person if I'd never heard of it. But now I am a person who knows about this sandwich - & so are you.

good croissant & very cute inside. i went on a tuesday morning & it was a lovely spot to have in petit chocolatine & cafe before the day started. chocolatine was pretty good but not buttery enough & a bit overcooked. i would go back to see if it was just an off batch. staff are super friendly & great vibe inside. $5 coffee & croissant is hard to beat.
Excellente pâtisserie française, l'accueil du gérant originaire du Var & de son équipe est très chaleureux, les produits sont d'excellentes qualités 👍👍👍 Une adresse à ne surtout pas manquer à Montréal dans le quartier Saint-Henri 😉 Nous y avons déjeuné en famille, tout est parfait, vous pouvez y aller les yeux fermés 😃 Je recommande vivement ✌️
Replonger au coeur du sud de la France tant par la décoration, que par l'accueil chaleureux & les produits typiques Croissant, pain au chocolat, suisse ou encore roulé à la cannelle tout était délicieux Y compris le flan que nous avons prit à emporter Bravo !
Cute cafe, with lovely decor is a new addition to Notre Dame street. Service is super amicable. Enjoyable cold latte & a flan cake was satisfying. Recommended.
New found favorite local pastry store. Pain au chocolat, pain au raisin... The best. The chocolate used in the pastries taste phenomenal. Sweet & tasty, with a great crunchy exterior & soft buttery interior. Pain au raisin is also amazing. Give it a try. Thanks for the great pastries!
