Behind the project, chef Geoffrey Emiliano Moreau takes a rigorous approach deeply rooted in tradition, notably through the daily nixtamalization of corn.
Meanwhile, Dobe & Andy, a cult-favourite address in Chinatown, continues its work of preserving and sharing Cantonese BBQ traditions, offering dishes grounded in long-standing expertise now carried forward by a new generation.
