Originating from the village of Saint-Maximin in the heart of Provence, Nans fell in love with pastry from a young age.

After studying pastry at the foot of the hills of Provence, Nans worked for 12 years in prestigious establishments on the shores of the Mediterranean.

Having arrived in Saint-Henri several years ago, Nans gained various experiences in Montreal's finest pastry shops. The taste for entrepreneurship and the desire to introduce Provençal pastry to his Quebec friends led him to launch his own business to give them a taste of Provence.

As a pastry chef, but also an ice cream maker, chocolatier, and confectioner, Alexis is a jack-of-all-trades who puts his full range of skills at the service of taste.

With over 10 years of experience in prestigious French establishments in the south of France, Alexis set out to discover Quebec and the Saint-Henri neighborhood in Montreal. Leading a team of about ten people within a large Quebec pastry group, Alexis used all his talents to introduce new flavors.

Enticed by entrepreneurship, he joined Nans at "Un Instant en Provence" to introduce French pastry to as many people as possible.

Franchement déçus :( Pas tellement de choix sur place VS ce qu'on avait vu de la publication Instagram & ce n'est pas extraordinaire niveau goût... Pour couronner le tout c'est quand même cher (31$ pour 2 cafés, 2 pâtisseries & 1 baguette...). Un latte citrouille qui n'a pas le goût de citrouille... Peut-être que les viennoiseries valent le détour mais pour le reste bof bof.

Très belle pâtisserie aux saveurs raffinées de la France, avec une signature venue tout droit de la Provence, avec un excellent service ! J'ai beaucoup aimé la tarte au citron, la religieuse lavande citron, le flan vanille (dont la part pourrait être un peu plus grande 🙏), & le Saint-Honoré. Le chocolat chaud était particulièrement à mon goût & de manière générale, le sucre pas surdosé, ce qui m'a permis de manger plus & d'apprécier les différents goûts & saveurs :)

Heard really good things about this place so had to try it for myself. All the pastries we tried were so good. Super fresh & well made. The layers of the viennoisseries are super flaky with a lot of layers which is something I look for. The staff were super nice & welcoming. Wasn't super impressed by the coffee. Never been to Provence but it does seem like it can be a great introduction. Such a great find. Would definitely go back!

Expérience très mitigée dans cette nouvelle boulangerie du quartier Saint Henri. D'abord lorsque nous sommes entrés 3 personnes du staff étaient là, parlant entre elles, mais aucune ne nous a dit bonjour & personne n'a pris la peine de nous expliquer les différentes pâtisseries proposées. Ensuite les prix, 3.99$ un pain au chocolat? 4.99$ un petit suisse? 9$ une pâtisserie? C'est juste extrêmement cher! Nous ne connaissions pas les prix avant de venir & j'avoue que cela a été une douche froide pour nous. C'est la première fois à Montréal que nous payons un pain au chocolat aussi cher! De plus, les produits n'étaient vraiment pas à notre goût. Le pain chocolat était fade, plutôt brioché, pas du tout croustillant & il manquait clairement de beurre. L'éclair à la lavande était très mince & fade également comparé à celles qu'on peut trouver dans d'autres très bonnes pâtisseries de Montréal. La pâtisserie chocolat noisette était quant à elle beaucoup trop compacte & humide. À 9.50$ la pâtisserie on s'attend à quelque chose de vraiment incroyable. Honnêtement les prix proposés sont juste beaucoup trop élevés, surtout vu la qualité des produits. Vous pouvez trouver d'autres bien meilleures viennoiseries & pâtisseries pour moins cher à Montréal. Je mets 2 étoiles car la boutique est vraiment très belle & très bien décorée par contre. Mais cela ne suffira pas à nous faire revenir.

The best lemon tarts I have ever had, & I have had a lot, across N America, France, UK... Super bright & lemony without being cloying. The texture is perfect, smooth & redolent. The cookie bases were all nicely baked a deep golden brown & not soggy. My own preference is a bit less sugar as the sweetness competes with the filling. But... this kicks the lemon tarts at the Mtl chain bakeries to shame. Prices are marginally more here, but well worth the extra buck for something that you can tell was made with love. I'll pace myself with the other items as I'd be broke & fat after a few weeks. Everything there looks lovely. The cafe itself is adorable with whimsical touches of Provence, very clean & bright & delicious smelling.

Unfortunately, it didn't match the expectations built based on most of the reviews here. Pain au chocolat is quite average, not flaky, butter flavour wasn't there. The only thing I liked about it was the chocolate used. There are way better croissants & pain au chocolat in Montreal. We liked the eclaire chocolat but it's over $7, not worth the price in our opinion. We also tried the tiramisu / chou which is over $8. It didn't taste like tiramisu & the chou was nothing special for the price paid. The coffee shop itself is nicely decorated, simple but cute. There are only 3-4 tables & the rest is a long bar with stools. Staff is welcoming & quick to get your order. On-street parking was easy to find & free. Overall, I'm not french but it didn't meet my expectations, one of the things I love about Montreal is the variety of great french pastries & boulangerie so I'm always open to try new places. Also, I found it to be overpriced.
