Delicious food & drinks. Menu seems to be seasonal, as I believe that the ingredients are locally grown/sourced. I appreciate the effort & time the owner took to explain us their concoctions. Had a great experience & will be back this summer when the doors are wide open

The vibes are sick. It looks so cool inside & I love that they have a shareable drink. There is a lot of ice but I swear there's liquid under there still. Taste wise, pretty average but the shell at least makes it fun!

Insane spot, literally every single thing on the menu is good & Jacques the bartender is just so nice & one of the best ive seen... He explained all of our drinks in detail & customized my drinks with my taste!!
Excellent experience, especially the helpful & friendly staff! All the entrees & drinks we ordered were fantastic. Project Pilote is definitely a high point of our visit to Montreal!
I'm a regular & I can say this is definitely somewhere to have a drink to catch up with a friend or have a simple nice date. If you come to just pass by & have a cocktail, this is definitely the place. If you're here to also eat, you won't be deceived! They make both their menu & their cocktail menu seasonal (with & without alcohol). The head bartender also makes his own non alcoholic liqueur so for the people that don't drink, this is your place! The creations there are as unique & as personalized as possible. The entire staff is friendly & I always end up in a small conversation with each & every one of them. I also pay different totals every so often so I won't put a specific price but I promise you won't be deceived at Projet Pilote!

Exceptional menu both in terms of drinks & food. The cocktails are original & heavenly & the ambiance is quite cool! Mad props for the live music situated discreetly on the upper level above the entrance.
The entire experience from beginning to end was perfect. The staff here is incredible. The food is fresh & delicious. The beer they make is delicious. The gin they make is...delicious. Each staff member we spoke with spent time explaining some aspect of the food or drinks or process that they love. Get the burger. Get the dessert. Get the gin drink. Get whatever they are making.
Super atmosphere, merveilleux service. Super bon drink, je recommande définitivement cet endroit! & j'ai même pas encore goûter la bouffe ou la bière qui, j'en suis certain sont spectaculaires.
Je vais revenir !

Superb, imaginative cocktails were what the night called for, & Projet Pilote delivered. I discovered this bar on a trip to Montreal two years ago & it was top of my list of things to do on my return visit last night. Very knowledgeable & helpful staff helped my party select the perfect drinks. Thanks Ishmael & the rest of the Projet Pilote staff for a good night!
Expensive. We were like 16 people & we went to celebrate a birthday. We all had drinks & something to eat & at the end we wanted to sing happy birthday & eat the tiny cake, but they didn't let us because'we sell food so you can't celebrate your birthday'. So money is the only thing that matters there
I must say I had zero expectations going in, I didn't know much about this place & we were just looking for a quiet place to have a drink & covered from the rain. I really enjoyed my visit, we stayed almost 3 hours.
The layout works, it's comfortable, the decor is pretty nice. The cocktails are good & creative. Staff was friendly.
There are some food options, quite limited menu. Our food was ok but I found it too expensive for what it is. Next time, I'll stick to drinks only.

Jacques, the bartender, was fantastic: he made us off-menu cocktails based on our favorite ingredients & flavors. He's very knowledgeable & the drinks were consistently exceeding expectations.
Nice little place great ambiance, decor & nothing ordinary.
All the drinks beers are local/small batch products no big names, gotta try.
Similar for the food, everything is a little fancy & out of the ordinary. Gnocchi recommended, smash burger was fine but doesn't come with anything on the side which left me hungry & seems designed to require loading up on sides.
Overall really fun experience, do expect to be trying something new. At the same time expect to pay a little more as everything is a little off the beaten path, however you do get what you pay for.
The service is impeccable. Came here on a fist date & the staff is attentive & kind. Had the tartine & wine & I highly recommend it, the food is tasty, the drinks are on point & the atmosphere is perfect. Served by Jeanne & had a wonderful evening. Highly recommend for girls evenings & dates!
Throughout the years I have been going to Projet Pilote for a couple of drinks, some times food & celebrated my birthday here last year. The service never disappoints! In fact it has been consistently excellent, friendly, attentive & over all well managed. The atmosphere is pleasant because the staff work well as a team & they take pride in their work place. We are lucky to have this gem in our neighborhood! 🤘🏻
