Gibby's serves as a destination for prime cuts of beef and fresh seafood within a historic stone building defined by wood-burning fireplaces and dark wood accents. The menu focuses on dry-aged steaks that are trimmed on-site, alongside Atlantic salmon, rainbow trout, and oysters harvested from cold waters. Traditional sides such as baked potatoes, pickles, and sourdough bread accompany the primary meat and fish courses. Patrons encounter a multi-room layout that maintains an atmosphere of seclusion and warmth through its thick stone walls and low ceilings. The culinary preparation emphasizes classic grilling techniques over open flames to achieve specific textures and flavor profiles. Every selection of seafood undergoes rigorous sourcing standards to ensure consistency across the entire menu. This establishment functions as a dedicated center for meat and aquatic offerings in a centralized urban environment.
Gibby's is widely celebrated as a quintessential Montreal steakhouse, cherished for its historic atmosphere, elegant decor, and traditional charm housed within a beautifully preserved centuries-old building. Many patrons praise the restaurant for its exceptional service, noting that staff often go above and beyond to create memorable experiences for birthdays and anniversaries. The menu is frequently lauded for its generous portions, high-quality steaks, signature Beef Wellington, and unique touches like fresh bread, pickles, and palate-cleansing sorbet. While some guests have noted inconsistencies in food preparation or service quality during busier times, the overall consensus among regular visitors and first-time guests alike highlights the establishment as a reliable and iconic destination for a classic fine dining experience in Old Montreal.
It's so sad to see this iconic restaurant having lost its edge. The steak was pretty good, but that's about it. The salad is different, the monte carlo was inedible, as were the desserts. I don't need to go back, too bad.
Gibbys, just one word & I will say it in my mother tongue, French: Magistral! World class service, superb food, & you know, when you do a classic like Escargots à la Bourguignonne way better than most of your peers (especially way better than those who are supposed to deliver the best version of that), & that is your case, all I can say is'Salut l'artiste!'. Impressed I was! & not to forget the tableside Brazilian coffee: I am sure you already know that, but this is a first in Montreal. & that was also very very world class. You will win many hearts with that one (not that you are not already winning hearts. Of course you do: your dining rooms were packed to the brim when I was there!).
Vitaly, Justin, Charlie & Martin were stellar, we had a huge group & stayed way later than appropriate but they were all amazing the entire night (Vitaly was our main server). Incredible place
We've tried their lunch & as always their meat is just so good. They even give you a sorbet after the appetizer to clean your palate. The only thing I didn't like is the dessert which is a pecan pie & it's just too sweet. Try the boeuf a Diane, it's so good. They have valet parking so it's a big plus considering how busy it is in the summer or when weather is good.
Very disappointed with my recent experience at Gibbys.
I made a reservation for 8:00 PM & arrived exactly on time, yet I was still asked to wait in line. If guests respect your schedule & show up as requested, their time should be respected as well. To make matters worse, I left my name & number for a manager to follow up, & never received a call.
Gibbys used to feel like a special place to go out, with a certain standard & atmosphere. Now it seems that standard has slipped, with people being admitted in very casual attire like sweatpants. Whatever happened to maintaining a dress code & the experience that made this restaurant stand out?
We come from vacations & we saw this restaurant online & looks so good & I went yesterday with my partner to have dinner , the vibes , the food & everything was excellent , definitely a restaurant I will come back but it was a issue with my experience at this restaurant the service was really bad, I think his name is Salomon ( sorry if I don't remember his name) he was nice at the beginning but after he took out order that was it , he stop taking care of our table , we finish the salad & he never removed our plates we finish our meal & he did not take our plates away, he serve us water & the glass was dirty, he just stop approaching to us , & you can tell he was just talking with the tables who order bottles of wines ( we're about to buy one but after seeing that we don't want it anymore)I believe if you go to a fancy & expensive restaurant you are expected to have a really nice quality of food & a excellent experience with the service, in the other hand his co worker he took care of us so we decided to tip him instead that our' server' anyways , the food is was delicious so we are coming back, but definitely the manager need to have a talk with this guy. & hoping you guys can read my review!
