Gibby's serves as a destination for prime cuts of beef and fresh seafood within a historic stone building defined by wood-burning fireplaces and dark wood accents. The menu focuses on dry-aged steaks that are trimmed on-site, alongside Atlantic salmon, rainbow trout, and oysters harvested from cold waters. Traditional sides such as baked potatoes, pickles, and sourdough bread accompany the primary meat and fish courses. Patrons encounter a multi-room layout that maintains an atmosphere of seclusion and warmth through its thick stone walls and low ceilings. The culinary preparation emphasizes classic grilling techniques over open flames to achieve specific textures and flavor profiles. Every selection of seafood undergoes rigorous sourcing standards to ensure consistency across the entire menu. This establishment functions as a dedicated center for meat and aquatic offerings in a centralized urban environment.
Gibby's is widely celebrated as a quintessential Montreal steakhouse, cherished for its historic atmosphere, elegant decor, and traditional charm housed within a beautifully preserved centuries-old building. Many patrons praise the restaurant for its exceptional service, noting that staff often go above and beyond to create memorable experiences for birthdays and anniversaries. The menu is frequently lauded for its generous portions, high-quality steaks, signature Beef Wellington, and unique touches like fresh bread, pickles, and palate-cleansing sorbet. While some guests have noted inconsistencies in food preparation or service quality during busier times, the overall consensus among regular visitors and first-time guests alike highlights the establishment as a reliable and iconic destination for a classic fine dining experience in Old Montreal.
Another great experience bringing customers. We did not like the coffee, they took it back no questions asked without a charge. & when someone shared a meal they gave extra salad & potatoes. Super classy.....My lamb chops were amazing.
Loved Gibby's!!! Started with martini's, made perfectly. Entrees come with salad & a potato. We both had the wedge salad & the twice baked potato with our filet mignon. Everything cooked & served to perfection. I wish I could remember our server's name….he was excellent & very attentive.

This was not my first visit to Gibby's, it used to be a favourite of mine. This was however, my first visit in about 7 years, & I am not sure if it was an off day, or the service has declined. We went for lunch on Saturday at 11:45am. We arrived just as it was getting busy & were seated quickly, without any reservations. That's about when everything derailed. We were 3 adults & 2 children. Received our salads & bread within a reasonable delay. There was no real option for a GF salad except to have balsamic vinegar, which I found disappointing. As we sat, guests continued to pour in. A manager came by to pick up our empty salad plates after quite some time. My salad plate was not really touched. Without a proper dressing the arugula was not very tasty & there were only two tomatoes & I think a cucumber or an onion in the salad. It was not exceptional. There are other chain steak restos in Montreal that make a much better salad. No second loaf of bread was offered while we waited for our main course which arrived after 1pm. No butter was brought to the table with our baked potatoes, just the sour cream, even though I had ordered butter, sour cream & chives. There was nobody to even request butter from. Once the main dishes were placed in front of us, we never saw our waiter again. We asked a busboy for another drink. Nobody came to see if the steaks were cooked to satisfaction. Nothing. Finally, after sitting in front of our dirty plates for a good 45 to 60minutes, we walked to reception & said we had not seen our waiter in a good while, & asked what was the Table d'hote dessert. At that point a girl in black pants & shirt took over. She removed all of our dirty plates, & offered to bring us our dessert. I asked her for a GF dessert. None of us were ever offered our coffee or tea & I did not bother to ask, as by this point we had been sitting with two young children for 2.5hours for lunch. After dessert we went to find the girl again & asked for our bill. She said she would try to find our waiter. He finally arrived at 2:40, almost 3 hours after we had been seated for lunch. He never apologized, he never asked how the meal was, he never offered compensation...nothing.
Was the food good? It was mediocre, nothing great, but what stood out most to me was the lack of service & lack of empathy. I get that maybe they were short staffed, I get that maybe they were not expecting a crowd for lunch, but a restaurant of this caliber should have more experience in how to deal with this type of situation. Looking around many people in our section were not getting service. We were not alone. I won't go back. I was very disappointed & regretted our choice that day. It's a beautiful charming restaurant that used to have exquisite service.
Finding a steakhouse that serves world-class steaks is one thing; finding one that can seamlessly handle a bachelor party of 14 guys without missing a beat is a rare miracle. From the moment we walked in, the staff treated us like royalty. Usually, a group of our size gets shoved into a cramped corner or stuck with agonizingly slow service, but the hospitality here was incredibly sharp, fast, & accommodating.
The pictures of the food don't do it justice. We got a seafood tower (forgot to take that picture), delicious salad, & naturally a steak cooked to perfection. To accompany the food, the cocktails were superb. The old fashions & espresso martinis kept coming. Just make sure you leave room for their cheesecake.
Ambiance has certainly declined over the years. Filet Mignons (2) & salads were average at best. Service is above average. Prices are twice what they should be for the overall experience.
Atmosphere is good & food is pretty good. Unfortunately, there was a crying child crawling on the floor when we went but that's not Gibbys staff's fault.
Appetizers
The highlight to me was the pickle. Unfortunately, one of them was quite soft, but the other one was crunchy & delicious.
The fresh bread is great. The salad was great with lots of different flavors & the croutons & fresh.
The sorbet was a refreshing palate cleanser but honestly could have done without.
Mains
We ordered the 16 oz filet minion. It was cooked well & the meat was tender.
We also got the salmon filet. I found it to be quite salty & taste very heavy.
The vegetables were just okay & the twice baked potato was delicious.
Overall it was a nice time. I would consider coming back but I personally would probably order regular seasoning instead of the montreal steak spice.
The service is second to none. This steakhouse is pricy but you get your value. Everything starts with the house made pickles, bread, & fresh butter.you then move onto the generously large salad options. Prior to your main comes with a palette cleanser of lemon sorbet before. Each main is accompanied by roasted vegetables & a potato in your style. The dessert options are delicious & diverse.
Everything was absolutely delicious from start to finish. The service was warm, friendly, & professional, making us feel welcome the entire evening.
While our meals took a little longer to arrive than expected, they were more than worth the wait. We ordered the Youville Rack of Lamb, marinated with fine herbs & garlic, & the Rib Steak. Both dishes were cooked perfectly & packed with flavor.
The famous Gibbys salad was absolutely delicious, & we also enjoyed the lemon sorbet palate cleanser, which was a lovely touch. Our sides were the fresh asparagus & the Monte Carlo potato (twice baked with bacon, sour cream, & chives), & they were outstanding.
Honestly, I can't think of a single thing to complain about. The food, the atmosphere, & the service were all excellent. We will definitely be coming back!
