Wow. Dorsia produced one of the best overall dining experiences I have had in years. A colleague & I were in Montreal for the first time on a work trip & stumbled on visually stunning Dorsia. Despite having no reservations, the host found us two places at the bar, where the bartenders were exceptional. The food was equally as good. We met a couple of regulars at the bar, who invited us downstairs to Dorsia's new speakeasy, Bowie. Like the restaurant Dorsia upstairs, it totally nailed downstairs what a speakeasy should be. Layout. Decor. DJ. Live Music. Drinks. Clientele. Sadly, we had to work the next day & left at 11 pm, but I am sure the party went well into the night. The next evening, my colleague & I briefly discussed our options for dinner that night & agreed we would do no better than simply returning to Dorsia. When we arrived, all the staff remembered us as if we were longtime regulars. Despite it being a fully-booked Saturday night, they immediately tried to accommodate us, even though even the bar was full. Their solution was to open the speak easy early, where they guided us & comp'd us our drinks until two seats at the bar were available. The second night was just as good as the first. Between us, my colleague & I have easily been to over 100 countries, so we have experienced a pretty remarkable range of places, & in that long list, Dorsia stands out. Well done Dorsia. Keep doing what you are doing.
Let's start with the food: exquisite, a word so frequently misused it often feels hollow. But not here. The amuse-bouche-a delicate arrangement of sea urchin, caviar, & a whisper of Meyer lemon-was so ethereal, it felt like I was eating stardust. The main course? An herb-crusted lamb rack paired with an aged Bordeaux reduction that could have brought Nietzsche himself to tears. It was the kind of meal that makes you ponder the futility of existence, then promptly forget it as you revel in your next perfectly executed bite. The dessert, a deconstructed lavender panna cotta, was so sublime I considered framing the plate rather than letting the busboy take it away. The ambiance? Immaculate. Warm, muted lighting cast over sleek, minimalistic decor that suggested wealth without screaming it-a detail I respect. The clientele was... acceptable. A mix of high-powered executives & impeccably dressed women sipping martinis with such precision you'd think it was choreographed. The music? A discreet mix of Miles Davis & Vivaldi, a soothing backdrop that never once overpowered the muted hum of power & privilege. What truly sets Dorsia apart, though, is the service. The waiter, who had a jawline sharp enough to rival mine, attended to my every whim with the sort of reverence I deserve. My water glass never dipped below half-full. My wine pairings were so on point they bordered on clairvoyance. I tipped generously, of course-anything less would be gauche. Would I recommend Dorsia? Not to Paul Allen. He wouldn't understand the nuanced brilliance of the chef's approach, nor would he grasp the importance of a reservation. But to those who can, & do, aspire to greatness-yes. Absolutely.

Amazing cocktails, friendly service with amazing decoration & most importantly I cannot get over how decadent the mussels were, the tomato base is seasoned perfectly with fresh soft slightly chewy mussels. It is hard to achieve that result but I can definitely say that those were the best mussels I have had in a while. I totally recommend!
The place has an old school decor. Chairs weren't really comfortable there isn't a back support. I know too much details! When we arrived we took our coat. I used valet cause it's always a nightmare to park in this area & it cost the same as a parking! We were a group for my friends' birthday it took a moment for them to figure out our tables for us to be together. Once we ordered our drinks it took a moment for the waiter to take our order. The waiter that we had was a bit socially awkward & not very attentive. But the rest of the staff were amazing. I ordered the beet salad it was good & I had to ask for bread. My friend ordered a burrata & I found it weird it wasn't served with bread. They offered the bread with a homemade butter with seaweed. It tasted weird but they also offered olive oil. I took a plate of pasta Agnolotti it was good! I took a mocktail margarita it was ok & overall it was well priced. We felt the plate was a bit small for our appetite.
Superbe nouveau restaurant!! Très délicieux, le décor est superbe & nous avons eu un très bon service! Ne manquez pas la table d'hôte jusqu'à 1er novembre le midi pour 25$ 😉

Très bel endroit, élégant & la décoration exceptionnelle & très confortable. On peut s'entendre parler même s'il y a de la musique. Le service tout à fait hors pair & accueillant. Bravo! Nos entrées étaient très bien, par contre les pâtes Pomodoro très moyen & l'assiette d'agneau correct. Le dessert excellent.
Mais quelle belle découverte ! Un véritable coup de coeur pour ce magnifique restaurant. Le décor moderne & épuré crée une ambiance raffinée, & le service est tout simplement impeccable. Chaque plat, de l'entrée au dessert, en passant par les cocktails, est un véritable délice. Je vous recommande particulièrement le flétan & le filet mignon, qui fondent littéralement en bouche.
