Review Summary

Overall, Bouillon Bilk is viewed as a refined, modern Montreal dining destination where inventive tasting menus and a strong wine program are consistently highlighted. Guests praise precise execution, thoughtful textures, and the sense that ingredients are showcased with care, with several courses described as beautiful and memorable. The tasting menu with wine or discovery pairings is repeatedly singled out as exceptional, and the service is praised for being attentive, professional, and friendly, with sommeliers delivering strong recommendations. Standout dishes frequently mentioned include scallops, duck, quail, foie gras, and seafood creations, while some reviewers note occasional missteps such as overly salty or heavy dishes, or desserts that don’t land, and a few critique the pace or warmth of the ambiance. The atmosphere is often described as elegant and minimalist, sometimes cool or chilly, though improvements after relocating are noted by some for more space and better flow. While price levels are regularly flagged as high, many feel the quality and experience justify the cost, especially for special occasions. In sum, Bouillon Bilk comes across as a top choice for food lovers seeking refined, creative cuisine, strong beverages, and standout service in Montreal, with a few caveats about value and mood depending on the visit.

Our most delicious dinner in Montreal. I am surprised that this place is not in the Michelin guide at least, since the serving dishes, taste & service are at a high level. & this is at relatively inexpensive prices. Scallops with shiitake, beef with snails & veal tartare were super delicious. I was just ready to lick the plates. I tried out the 5 course menu for 105 CAD & it was amazing amount of food! Unfortunately, I forgot the name of the waitress, but thank her so much for a wonderful evening.

Simply incroyable !! Found this restaurant specifically for my visit to Montreal & I am so glad I did! Beautiful artistry in the dishes & the wine pairings are to die for. Wish I had taken a picture of each & every one because I WILL be searching for them. The servers were so kind & accommodating & they incorporated all our wishes into the tasting menu. Cuisine wise, yes, I did feel transported to France. Can't recommend this place enough!

Stylish, intimate, environment in a central location (I was surprised that I had never noticed it before). Attentive, informative service. Tasty, interesting food (highlights include the seared trout, butternut squash ravioli & roasted beef). Very intriguing non-alcoholic beverage pairings! Ridiculously small portions for the dishes (even for a French-inspired restaurant)...

Absolutely the highlight of our trip. The food, service & atmosphere are all top notch. We ordered a La carte & enjoyed every bite: oysters, butternut squash ravioli, scallops, duck & clementine dessert. Each dish was prepared with the utmost attention to detail & incredible fusion of flavors. Our waitress described every dish prior to us ordering & when the dishes came, another explanation was given, which really allowed us to appreciate every bite. Highly recommend visiting if you're in Montreal!!

The chefs tasting was perfectly paced & the amount of food was just right. Service was wonderful & decor was minimalist & lovely. The strawberry dessert was one of the best bites I've had in a while. A few of the dishes could have been better seasoned but overall a lovely meal.

My husband & I went there for my birthday dinner. It was an amazing experience. We had their 5 course tasting menu. They were very accommodating & catered to my vegetarian needs. My husband had their usual one. Our server Natalia was very helpful throughout. They presented & explained all of the dishes very well. & we simply loved all of them. Being a popular place, it was totally packed. So do make a reservation well in advance. Highly recommend for a fine dine experience!

Enjoyed the 8 course tasting with wine pairing. Really incredibly executed dishes - I don’t think there was a miss with any course or pairing. Only tiny feedback was the pacing was a little slow between courses - 3.5 hours for 8 dishes was a bit too long for me.

Bouillon Bilk is an unexpected modern take on a neighbourhood fusion bistro, located in a nondescript retail space on The Main just north of the Quartier des Spectacles. Although located between Place des Arts & the trendy part of Saint-Laurent where the beautiful people hang out, this stretch is, well, let's be honest - seedy. You'll quickly forget any notion of a romantic after dinner walk & quickly head to your car, lock the doors & drive off. However, if you can put up with the location, you will be rewarded with a wonderful dining experience.

The decor is clean & modern, with solid wood tables & real cloth napkins. (It's unfortunate there are no tablecloths as the menu prices certainly would justify them. Hmmmmm...must be part of that green movement where you pay the same but get less because it's better for the environment). Service is reasonably prompt, although we would have appreciated having some bread to munch on a little sooner. As well, our waiter was a little too interested in the goings on of neighbouring tables while mechanically listing the day's specials. A little more focus on his clients (us) would have been warranted. We'll nonetheless excuse the staff, as the place was absolutely packed on the Friday evening we visited.

The menu features a limited choice of appetizers, mains & desserts - about six in each category - plus a few daily specials. Most dishes are what I would call Continental Fusion, a combination of the best ingredients from European & Asian cuisines. We tasted about half the menu & no one was disappointed. The tagliatelle with rabbit were exquisite, the scallops were tender & succulent & the guinea fowl with vegetables was heavenly. The wine list is ridiculously long (over 100 selections - all private importations we were told) & has something for everyone & every budget.

We measured the noise level at an average of 78-80 db with an audiometer during our meal on a very busy evening - which is on the high side of comfortable. One notch lower would have been perfect. This is not the place for a romantic dinner date, but rather for foursomes or sixsomes. Parking is available on the street. The bathrooms are clean & modern. Bouillon Bilk is a little pricey, but you will taste original dishes that are attentively prepared.
