About

Bouillon Bilk prioritizes a minimalist approach to French-inspired cuisine by emphasizing the purity of seasonal ingredients. The kitchen utilizes contemporary techniques to transform regional components into precise, geometrically plated compositions. Each dish demonstrates a commitment to bold, clean flavors through thoughtful layering and restrained presentation. The minimalist interior design reflects this focus, featuring stark white walls and understated furniture that draw total attention to the plate. This aesthetic environment serves as a neutral canvas for a menu that constantly shifts to match the availability of local produce. By pairing technical rigor with an appreciation for elemental textures, the restaurant maintains a distinct identity. The result is a series of focused, conceptually driven plates that interrogate traditional French preparation through a modern and creative lens.

This was really more than a meal, it was a total experience. Our server was Jason & he was super helpful, knowledgeable & funny! Everyone who contributed to the meal, from the other service staff to the sommelier & the host of the evening.

We chose the 8-course tasting menu with 7 wine pairings & we highly recommend for anyone. They were also super generous with the house made bread.

Thank you again!

This is easily one of the best restaurants in Montreal, if not the best. Do not pass go, do not collect $200, go directly to BB..Get the tasting menu.

Absolutely loved this place. I took my husband here for his birthday dinner & we both adored the food & drinks; i especially appreciated the non-alcoholic drink pairing option with the tasting menu. The Dashi Dirty Martini mocktail was revelatory. Every single dish was excellent. The service was fantastic & the vibe was impeccable, modern & upscale without being obnoxious. Will definitely come back here next time I'm in Montreal.

Ate at the bar for the tasting menu as a solo diner. Inconsistent is the best word for this place. Each dish either impressed or disappointed. Stand outs was the pasta, but duck was chewy & the fat undercooked. Desserts were one note. I chose the discovery wine pairings & the somm pouring the wine was dispassionate & disengaged. They require a physical card & not tap phone wallet for purchases over $250, which is ridiculous because a tasting will surpass that amount. As a tourist in another country I find it safer to not bring physical cards with me. So they had to do two transactions…it wasn't that they had to do that, it's that it goes to show Bouillon Bilk doesn't think about the experience. I recommend finding somewhere else.

We had the 8-course tasting menu with discovery wine pairings & it was 100% honestly one of the top 3 best dining experiences in my life. Food was amazing, Pairings were spot on, the atmosphere & staff was super great! Overall a wonderful evening. Highly recommend it & definitely will be going again. Thank you for a great evening!

Third time back here. Experienced three different seasons of Montreal & slightly different offerings on the tasting menu each time. Consistently excellent 💯

the tasting menu is a must-try

We dined at Bouillon Bilk on May 22, 2026.
Based on the online menu, I expected the 5-course menu to allow guests to choose five dishes from the menu, but it turned out to be a fixed chef's tasting menu. The website should make this much clearer so guests know what to expect before making a reservation.
After dinner, I raised this concern with a lady wearing black at the front desk (possibly the receptionist). She listened politely & acknowledged my feedback. However, as of today, I can see that the website still presents the menu in the same way, which may continue to create confusion & disappointment for future guests.
Unfortunately, the combination of misleading menu expectations & overly salty dishes made the evening less enjoyable than we had hoped.

We decided to order à la carte so we could try more of the dishes we were actually interested in. Unfortunately, it was VERY disappointing. It felt like French cuisine by formula - polished on the surface, but without originality, intuition, or any real understanding of flavor.

The canapés were very unbalanced - each bite leaned heavily in one direction, either overly salty or overly acidic, without much harmony.

The veal tartare was probably the weakest dish of the night. It was extremely gamey, to the point where it was difficult to enjoy. The veal itself didn't feel well prepared - there was noticeable connective tissue in the tartare, which made the texture unpleasant. The sea urchin sauce didn't bring any sweetness or brininess you'd hope for; paired with the crème fraîche, it only amplified the gaminess instead of balancing it.

The crab was fine. Nothing particularly memorable, but not bad.

The scallops were also very average. We've definitely had better elsewhere. The garnish felt uninspired, & while the scallops themselves were cooked okay, the seasoning was lacking. Scallops are hard to completely miss, & these were edible, but not especially exciting.

The duck & lamb were where things became genuinely confusing.

The duck breast itself was cooked well - great temperature, nice texture - but it was paired with a salty miso sauce that completely weighed it down. It really felt like it needed something brighter or slightly sweet/acidic to lift it & bring out the richness of the duck.

The lamb came with a clementine sauce that leaned sweet & citrusy, which felt like a very strange match. Maybe the kitchen was going for something creative, but it just didn't work for us. Honestly, it felt like the sauces should have been swapped.

Service was friendly at first. Staff explained the menu & dishes when we sat down, which we appreciated. After the food arrived, though, it felt less attentive. We were asked once how everything was tasting once, & it felt more like a routine check since our server's attention was already drifting to other tables.

Several plates were left unfinished, & no one followed up or asked why. Maybe he was afraid to hear our thoughts, or he just simply doesn't care.

Pacing was also quite slow. We waited around 20 minutes for appetizers, then another 30 minutes before the first course arrived.

Overall, we left disappointed. There were a few decent elements here & there, but the execution felt inconsistent, some flavor pairings were genuinely confusing, & the pacing didn't help. For the price point, we expected much better.
