Review Summary

Vargas is widely regarded as a sleek, upscale downtown Montreal destination that excels at providing a sophisticated atmosphere for both business meetings and celebratory occasions. Many patrons praise the quality of the steaks, noting that the meat is often cooked to perfection and full of flavor, while the addition of fresh, high-quality sushi adds a unique and enjoyable variety to the menu. While the service is frequently described as professional, attentive, and charismatic, some visitors have reported inconsistencies regarding wait times, occasional errors, or frustration with tipping and pricing structures. Despite a few mixed experiences concerning specific dishes or side options, the restaurant consistently earns high marks for its vibrant environment, excellent drink selection, and the welcoming nature of its staff.

Impressive 5-star staff, a top-notch ambiance, & a perfect fillet mignon stole the show at our office party. However, the dessert left much to be desired, & the Caesar salad was disappointingly simplistic. Overall, a mixed experience with room for improvement in the culinary department.

It is situated in the heart of Montreal's downtown area, making it convenient for both locals & tourists.

It is primarily known for its high-quality steaks, but due to dietary restrictions & considering its an official dinner, I preferred Chilean Sea Bass which was OK-ish. Their Ceasar Salad was excellent & fresh.

The restaurant is known for its elegant & stylish ambiance. It features modern décor, ambient lighting, & a chic atmosphere, making it suitable for business meetings.

Their service was how ever very slow which they need to improve.

What do you get when an upscale, oldschool steakhouse specializing in surf 'n' turf tries to cater to an increasingly diverse, health-conscious clientele?

A group menu of gravy-drenched meat & unoriginal sushi, with sides of iceberg salad, bland vegetables, tastes-likes-it's-from-a-can tomato soup & plain mashed potatoes, garnished with an oh-so-elevated sprig of parsley.

Would I have come here on my own? No. I'm clearly not this restaurant's target demographic.

Do I appreciate the effort they made to include vegan & vegetarian options on their group menu, like breaded cauliflower? Absolutely.

Did I imagine the chefs in the kitchen exclaiming "oh God, we have to include vegetables" in desperation? Many times.

Did my meal remind me of sad wedding venue or cafeteria food? Yes.

But if you're planning a group dinner, it sure as heck beats a steak-only menu. Plus there's lots of seating, & service is quick & efficient, so you'll be back at the office in under 2 hours.
