Review Summary

Vargas is described as an elegant, versatile dining spot where steaks, sushi and seafood shine, with meals praised for fresh ingredients, bold flavors and beautiful presentation. The atmosphere is repeatedly noted as warm and beautiful, with a renovated bar that adds a New York vibe and makes it a good setting for date nights, business lunches and celebrations. Service is often described as friendly, professional and attentive, with staff who know the menu, though a few visits mention slower pacing or occasional missteps in timing or food delivery. Dishes receive strong marks, from tender ribeye and tomahawk steaks to standout sushi plates and creative appetizers, while some sides and seafood platters disappoint or feel pricey for the portion. Desserts and cocktails garner praise, especially the creme brulee and well crafted drinks, though some diners call out uneven value for money. Corporate and private events are described as well organized with efficient wine service and generous portions. Overall, Vargas comes across as a reliable choice for flavorful, quality meals and a memorable night out, with many guests planning to return for celebrations or regular visits.

Food - their Lamb shanks, BBQ ribs, salmon plate are great. Tried their sushi for the first time, not bad at all. Onion soup is delicious with the old gruyere cheese. Cesar salad never disappoints. Their portion size varies from one dish to another. Service- nothing to complain about. Always good. Atmosphere- if you want a quiter ambience, do not sit near the bar. Otherwise, the ambience is great.

The steak was amazing. Rib eye fry aged 28 days to perfection. The sushi on the other hand was lacking, & probably not even on par with your typical all you can eat joint. The service was great, but it seemed like a restaurant made more for business meetings than to celebrate special occasions. Overall, if you are looking for great cocktails & steaks, would recommend.

I had a 90 day dry aged rib eye, it was cooked perfect. I had the bone marrow & whisky sauce to dip & it was delicious

We were celebrating our anniversary & made reservations to eat here. Some of the low ratings concerned me however I don't see the merit in them? The food was fantastic! I ordered the Ribeye & my wife ordered the kamikaze. Also got a side of mushrooms & mashed potatoes. Everything was perfect, steak was cooked to perfection & the sushi was very high quality. Service was not slow at all (& the place was packed when we went). Not sure of the negative reviews but I had a great experience. Will return when we visit Montreal again!

So on Saturday me & my friend went to this restaurant & let me tell you. The chef didn't do a good job at all,the Ribeye stake was so chewy & it was suppose to be medium rare was not that at all & it had sea salt on it was most disgusting thing ever I wish they can take it off the menu. & the main course I had calamari it was so chewy to & tight I had to send it back
& the mash potatoes was not good either it was so dry omg. The next time I go back their I want the sous chef Ronald Franklyn to be there cause the chef who works on the weekend don't do a good job..
