Place wasn't busy...There was only 2 table of 2 but probably because it's a weekday,& it was Thursday to be exact.
The menu is either you get the 7 or 5 tasting menu with wine accompaniments of full or half accord.We chose to get the seven.The first one was a charcuterie with sapin.Nothing special & the sapin was too strong.It completely killed the plate.We gave a benefit of the doubt for the next plates but until the last plate of dessert, nothing stands out.I found that most or some of the ingredients of the plate doesn't go along well.Everything in the buffalo plate was all sour.The mushroom with gnocci plate was ok or we can say good but not exceptionally good.For a restaurant that categorized as fine dining,....All the plate lacks refinement taste & texture per se. Even the wine accompaniments doesn't blend well with the plates.There was probably 2 or 3 that's ok.
Decoration & ambiance is good & nice.We should have chose the table not the table with high chairs.My mistake.
Service is very good.The owner is friendly & respectful.
We ordered the 7 tasting menu with half accord but charged with full accord.

Excellent experience tonight from beginning to end! We got the 5 course menu & the food was incredible. Highlights were definitely the pasta with beef cheeks, the dessert paired with pear liquor & the cod cheeks. The pasta in particular led to a pleasant out of body, existential experience. The owner was super friendly & made us feel welcome throughout. The open layout with the kitchen in the middle of the restaurant made for a great dining embience. We originally reserved the dining counter seats which I would definitely recommend as you're eating & watching them prepare each dish in front of you but the owner allowed us to make the unbelievable decision of sitting by the windows instead. Mistake there. Excellent wine pairings & you can order half glasses. 5/5 would go again.
Did the 7 course tasting with wine pairings. Everything was outstanding & carefully planned, prepared & presented. The owner is passionate about his craft. A definite must if your in the Sherbrooke area.
We were utterly delighted by our experience at Restaurant l'Empreinte on a rainy Wednesday evening. Each course -- made with fresh local ingredients -- had an integrity & beauty of its own, the wine pairings were delicious, & the pacing was perfect. Benoît was a fantastic host & storyteller. We hope to return again very soon.
